Yep here ya go. I think it maybe Betty Crocker but not sure. My mom gave it to me. Enjoy!
3 cups all-purpose flour
2 cups shredded zucchini
1 1/2 cups packed brown sugar
2/3 cup vegetable oil
1 tablespoon baking powder
2 teaspoons ground cinnamon
1 teaspoon salt
1/4 teaspoon ground nutmeg
4 eggs
1/2 creme fresh or sour cream ( sounds gross but makes it really moist)
1. Heat oven to 350°F. Generously spray 12-cup star-shaped bundt cake pan with cooking spray.
2. Mix all ingredients with spoon until well blended. Pour into pan.
3. Bake 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Turn pan upside down onto wire rack; remove pan. Cool completely on wire rack, about 1 hour.

2 cups coarsely grated zucchini
1 can (8oz) crushed pineapple

1 1/2 teaspoon cinnamon
3/4 teaspoon nutmeg
1 cup chopped walnuts
1 cup raisins
1 Preheat oven to 350°F. In a mixer, beat eggs. Add oil, sugar, and vanilla; continue beating mixture until thick and foamy. With a spoon, stir in the zucchini and pineapple.
2 In a separate bowl, combine flour, baking soda, salt, baking powder, cinnamon, and nutmeg. A third at a time, add dry ingredients into wet and gently stir (by hand) after each addition. Add the walnuts and raisins, blend gently.
3 Divide the batter equally between 2 greased and flour-dusted 5 by 9 inch loaf pans. Bake for 1 hour or until a wooden pick inserted in to the center comes out clean. Cool in pans for 10 minutes. Turn out onto wire racks to cool thoroughly.
Makes 2 loaves.
Sweet Zucchini Bread
Very moist, very easy!
1 c. oil, 3 eggs, 2 c. sugar, 3 c. self-rising flour, 1 t. vanilla, 2 c. grated zucchini, 1 t. baking soda, 1 t. cinnamon, 1 c. chopped nuts (I use pecans but you can also use walnuts).
Mix dry ingrediants. Beat eggs, add other wet ingrediants. Mix all, add to dry ingredients, mixing just until completely blended. Pour into well-greased loaf pan. Bake at 350' (preheated oven) for approx 1 1/2 hrs.
Serve warm with butter, or cold with vanilla ice cream. Or, make a drizzle icing of powdered sugar, milk, and a little vanilla. Drizze a small amount over bread and use for desert along with coffee or tea.
Double or triple wrap and freeze for later.
I also use small disposable loaf pans, about 4 or 5 of them, well-greased, bake approx. 1 hr. I freeze them and take out as needed for unexpected company for a quick and tasty dessert.
They also make great gifts!!! Put the small wrapped loaf in a gift bag along with a small container of specialty coffee or tea.
