I need a good recipe!!?

My husband wants a rhubarb pie... i cannot find a recipe that sounds appetizing... please let me know what your favorite recipe is!!

RHUBARB - STRAWBERRY PIE

1 1/4-1 1/2 c. sugar
3 tbsp. cornstarch
1/4 tsp. salt
1/4 tsp. ground nutmeg
3 c. rhubarb, cut into 1/2" pieces
2 c. sliced fresh strawberries
1 tbsp. butter
Pastry for double crust pie

In large mixing bowl stir together sugar, cornstarch, salt and ground nutmeg. Add rhubarb pieces and sliced strawberries, toss gently to coat fruit. Let stand for 15 minutes.
Meanwhile, prepare and roll out pastry. Line a 9 inch pie plate with half of the pastry. Trim pastry to edge of pie plate. Pour fruit mixture into pie plate. Dot with butter, place pastry on top of filling. Cut slits in top to allow steam to escape seal and flute edge. Bake at 350 degrees for 1 hour.

BLUEBERRY - RHUBARB PIE

Pastry for 9 inch 2 crust pie
1 1/3 c. sugar
1/3 c. all-purpose flour or 3 tbsp. cornstarch
1/2 tsp. grated orange peel, optional
2 c. cut up fresh rhubarb
2 c. fresh or thawed frozen blueberries
2 tbsp. butter
Sugar

Heat oven to 425 degrees. Prepare pastry. Stir together 1 1/3 cups sugar, the flour and orange peel. Turn rhubarb into pastry lined pie pan; sprinkle with half of the sugar mixture. Repeat with blueberries and remaining sugar mixture. Dot with butter. Cover with top crust which has slits cut in it. Sprinkle with sugar. Seal and flute edges. Cover edge with 2 inch strips of aluminum foil to prevent excessive browning; remove foil last 15 minutes of baking. Bake until crust is golden brown and juice begins to bubble through slits in crust, 40-50 minutes. Serve warm.
Substitution: 1 package (16 ounce) frozen rhubarb, partially thawed, can be substituted for the fresh rhubarb; decrease sugar to 1 cup.

DUTCH RHUBARB PIE

1 c. sugar
2 tbsp. cornstarch
1 c. water
3 egg yolks, beaten
1 tbsp. butter
1/4 tsp. salt
1/2 tsp. vanilla
1/2 tsp. lemon flavor
2 c. diced rhubarb
1 unbaked 9 inch pie shell

In saucepan cook sugar, cornstarch, water, and salt over medium heat until thickened, stirring constantly. Stir small amount into beaten egg yolks, then gradually add the rest of the eggs. Add flavorings and diced rhubarb. Pour into pie shell and bake at 375 degrees for 55 minutes, or until filling is set.
Beat the 3 whites until soft peaks add 1/3 cup sugar, 1 teaspoon vanilla, and 1/4 teaspoon cream of tartar. Spread on top of pie; brown in oven. Cool.

3 tablespoon quick cooking tapioca
1/4 teaspoon salt
1/2 teaspoon ground nutmeg
Dash ground cinnamon
3 cups 1/2 inch pieces fresh rhubarb
1 cup fresh strawberries, sliced
1 teaspoon grated orange rind (optional)
1 tablespoon butter

PREPARATION:
In a large bowl mix together the sugar, tapioca, salt, nutmeg, and cinnamon. Add the rhubarb, strawberries, and orange rind and stir until the mixture coats the spoon. Let the mixture stand for 15 minutes. Line a 9-inch pie plate with the pastry; spoon in the strawberry rhubarb mixture. Dot the top of the strawberry rhubarb mixture with the butter. Cover the pie with rolled out pastry; crimp edges. Bake in a preheated 400° oven for 35 to 40 minutes, or until crust is browned.
Serve pie warm with with whipped cream or vanilla ice cream.

Mulberry and Rhubarb Pie

You can use fresh or frozen berries.

1 pastry for double-crust pie
2 cups mulberries
1 cup thinly sliced rhubarb
1 cup sugar
4 tablespoons flour
2 tablespoons butter

1. Combine mulberries and rhubarb in a medium bowl.
2. Combine sugar and flour in a seperate bowl.
3. Sprinkle about 1/3 of the flour mixture into the bottom of a pastry lined 9-inch pie pan.
4. Pour mulberries and rhubarb into the pie pan and add remaining flour mixture.
5. Dot with butter.
6. Place top crust, cut steam vents, and flute edges.
7. Bake at 425 degrees for 40 to 50 minutes or until crust is browned and juice is bubbling out of steam vents.

Hawaiian Rhubarb Pie

Regular pastry for a nine inch pie plate top & bottom
2-eggs
1-cup sugar
1/4-tsp salt
2 1/2-tsp flour
1-tsp vanilla
2-tbsp milk
2-cups diced rhubarb
1-cup drained pineapple (14 oz tin) crushed

Beat eggs, add sugar, salt, flour, vanilla and milk
Beat well
Pour over rhubarb and crushed pineapple stirring lightly
Turn into pie shell and cover with top crust
Bake at 350* F for 35 minutes or till crust is brown and rhubarb is tender

Rhubarb-zucchini Pie With Cherry Jelly in Buckwheat Crust

Odd looking but if you close your eyes and open your mouth (and mind) you are in for a treat. Recent studies report that including cinnamon in your diet can help control diabetes type 2. Replace the brown sugar in the crust with Sweet'n'Low Brown for a lower sugar content.

Crust
1/2 cup buckwheat flour
1 cup unbleached flour
2 teaspoons brown sugar, packed
1/2 teaspoon cinnamon
3 tablespoons shortening
6 tablespoons butter
1/4 cup ice water
1/2 teaspoon salt
Filling
2 eggs, lightly beaten
3/4 cup honey
1 teaspoon orange rind, grated
1/4 teaspoon cinnamon
1/4 teaspoon salt
3 cups zucchini, peeled and chopped
3 cups rhubarb, sliced

Cherry jelly
1/2 lb tart cherries
2 tablespoons honey
2 tablespoons sugar
2 tablespoons mung beans, hulled
2 tablespoons water

Egg Wash
1 egg, beaten
1 tablespoon water
cinnamon sugar

Preheat oven to 400°F.
In a mixing bowl, combine flours, sugar, and cinnamon.
Cut in shortening and butter until the mixture is crumbly.
Add water slowly until dough forms.
Divide dough into two balls.
Place cherries in a heat-proof bowl and place over a pot of boiling water.
Cover with a tight fitting lid and steam for 25 minutes.
Strain contents of bowl, retain the liquid and dispose of cherries.
Combine cherry liquid with sugar in a saucepan and bring to a boil.
Add honey to cherry mixture, remove from heat and cool.
Grind mung beans in blender for 5 minutes.
Sieve the mung beans and combine flour with water.
Add mung bean mixture to cherry liquid.
Roll out half of buckwheat crust and line 8 inch pie pan.
Beat eggs and honey togther with cinnamon, salt and orange peel.
Add rhubarb, zucchini and cherry jelly to egg mixture and mix well.
Pour filling into pie pan.
Roll out second half of crust and place over filling.
Crimp edges and cut slits for steam in top.
Use a pastrey brush to cover the top with egg wash and sprinkle with cinnamon sugar.
Bake at 400° for 15 minutes.
Reduce temperature to 350°F and bake 30 minutes.
Cool before serving.
Top with vanilla ice cream.

Glazed Strawberry-Rhubarb Pie
Ingredients:

1/8 ts Salt
1/3 c Flour
2 c Fresh strawberries
2 c Fresh rhubarb, cut in 1" pieces
2 T Butter or margarine
1 T Sugar
1 Pastry for 2-crust pie

Procedure:

Combine 1 1/4 cup sugar, salt, and flour. Arrange half the strawbwerries and rhubarb in a pastry-lined 9 inch pie pan. Sprinkle with half the sugar mixture. Repeat with remaining fruit and sugar mixture. Dot with butter. Install top crust and flute edges to make high-standing rim. Brush top of pie with cold water and sprinkle on 1 tablespoon sugar. Cut steam vents in top crust. Bake in hot oven (425 F) 40 to 50 minutes or until rhubarb is tender and crust is browned.
