How do you stop blood from coming out of chicken legs when frying in oil?


Answers:
Shell -- this is a little more work but will give you a much better fried chicken legs with no blood . With a sharp raring knife or boning knife poke it into each leg until you feel the bone make a small slit in each leg 1/2 inch long at the meatiest part of the leg. place chicken legs in a zip lock 1/2 gallion size bag. Disolve 2 tea spoons salt 1/2 tea spoon brown sugar to each cup of water it takes to completely cover the chicken leggs.
To determin how much water you will need first measure cold tap water to cover legs .
dump the plain water. Now using that noumber of cups disolve the salt and sugar into it and cover legs with the brine.place in a large bowl sit in Frig at least 6 hours before cooking. Take out of bag wash to remove the brine. And cook as usual.Works
with all parts of chicken.NO MORE BLOOD!
This is not as hard as it sounds but well worth the extra time. Injoy your fried chicken. jim b

Put them in a bowl of ice water and set them in the fridge overnight before you fry them.

Ewwww obviously they haven't been bled out properly. No suggestions other than find another brand or butcher.

You have to soak them in salted water......this is kind of like kosher-izing them.

Once you see what come from this you will never NOT soak them again. You won't necessarily see blood but some kind of scum comes to the surface . You chicken will taste better too.

I like to boil the chicken legs in spices/herbs to make sure the chicken is cooked and has absorbed the flavour when the liquid is dry, and then deep fry the chicken. Not only do you have great tasting chicken, but a well cooked chicken legs.

why?just fry the things.
