How does cooking affect the mouthfeel/texture of a food?

It softens it up a bit, for example, dried peas are hard to eat and sour, however, if you cook them a long time you get pea soup, which is nice and tasty. tf

what method of cooking? with what ingredients? too vauge of a question.

i would say that it makes the texture smoother as vegetables and hot cereals. not all the time b/c some taste better when crisp cooked. it could also affect the moisture content ie: meats, so the doner (sorry) the meat the dryer it is causing that leathery feel in the mouth.

when you cook something the strands of protien are changed depending on your cooking method. Thereby making the food "feel" different in your mouth.
