Lemon Pilaf
This dish is not only delicious; it shows off your entrée.
The lemon flavor is very light and will complement your chicken.

1 cup sliced celery
1 cup chopped green onions with tops
2 tablespoons butter or margarine
3 cups steamed rice
1 tablespoon grated lemon rind
1 teaspoon salt (optional)
? teaspoon black or white pepper

Sauté onion or celery in butter until tender. Add rice, lemon rind and seasonings; toss lightly. Continue cooking over low heat about 2 minutes or until thoroughly heated, stirring occasionally.

Makes 6 servings

SIMPLE BAKED ONION SIDE DISH

2 layers chopped or sliced onions
grated cheese
1 can Campbell's Cream of Mushroom Soup
milk (enough to soften soup)
garlic powder
potato chips, crumbled

Select a small to medium sized casserole or oven proof baking dish. Spray with non-stick spray or wipe with melted butter.
Peel, chop or slice enough onions to cover the bottom of the baking dish so that you will have a double layer of onions on the bottom. Sprinkle the onions with enough grated cheese to cover and a light sprinkle of garlic powder.

In a medium bowl, combine soup with enough milk to soften the soup to pouring consistency. Pour over the onion and cheese evenly. Sprinkle with crumbled potato chips.

Note: This is even easier to make if you use a food processor to slice or chop the onions.

Kids love to prepare this dish, too!

Bake at 350°F for 30 minutes.

WILD RICE SIDE DISH

1 c. uncooked wild rice
1 (10 1/2 oz.) can condensed consomme (undiluted)
1/2 lb. mushrooms, sliced or 1 can sliced mushrooms, drained
1 tbsp. butter

Wash rice. Place in greased 1 1/2 quart casserole. Add consomme. Let stand overnight or for several hours. Bake covered at 350 degrees for 45 minutes, adding a little water if rice becomes dry.
Meanwhile, saute mushrooms in butter until tender. Stir into rice. Rice should be moist with all liquid absorbed.

(A nice side dish with game and poultry.)

ITALIAN VEGETABLE SIDE DISH

1 can green beans
1 can Italian style stewed tomatoes

Cook both vegetables separately. When ready to serve, mix both vegetables together for a delicious side dish

rice or noodles so that you put the extra sauce over ... and a nice tossed salad.

Rice Vermicelli

1/2 cube of butter
2 chicken bullion cubes
2 cups water
3 coils or about 1 1/2 cups of fideo cappelini pasta (break it up into pieces)
1 cup white rice

Melt the butter in a frying pan over medium heat. Stick two bullion cubes into the two cups water and heat in microwave until bullion is dissolved. Brown fideo cappelini pasta in the butter until it is golden brown. Add 1 cup of rice and stir until rice is coated in butter mixture. Add the two cups bullion mixture, bring to a boil for one minute, turn onto low heat, cover pan and let it simmer for about 5 to seven minutes (until rice is swollen and cooked). Serve.
Optional: You can add parsley, or some mushrooms and green peppers. Truly, it is delicious just plain. What's nice about this dish is that it has a hugely significant less salt then the boxed mixes, and because you use bullion cubes rather than the canned bullion, again you are not getting tons of salt. It has just the right amount. It's a favorite family recipe and side dish.

Parsley buttered red potatoes:
wash potato, sliced
1/4 cup butter
sprinkle on parsley
Bake 350 degrees for about 1/2 to 45 minnutes.

Always corn on the cob, brocolli with cheese sauce, parsley buttered potatoes, tomato basil, pineapple chutney, cheesy beans, any kinda veggies will work.

Basil tomatoes:
slice 2 tomatoes,
drizzle virgin olive oil over tomatoes,
sprinkle with basil add spices to taste you can let these sit at room tenperature up to an hour.

mashed potatoes and sauteed string beans

Parmesan Roasted Asparagus
6 Servings

2 1/2 pounds fresh asparagus (about 30 large)
1/4 teaspoon black pepper - freshly ground
2 tablespoon olive oil
1/2 cup Parmesan Cheese - freshly grated
1/2 teaspoon kosher salt
1 large Lemon cut in wedges for serving

Preheat the oven to 400 degrees F. If the stalks of the asparagus are thick, peel the bottom 1/2 of each. Lay them in a single layer on a sheet pan and drizzle with olive oil. Sprinkle with salt and pepper. Roast for 15 to 20 minutes, until tender. Sprinkle with the Parmesan and return to the oven for another minute. Serve with lemon wedges

New Potatoes with Chive Butter
serves 6 to 10

3 1/2 lb. small new red potatoes, unpeeled
3 tablespoons butter, melted
3 tablespoons chopped fresh chives
1/4 to 1/2 teaspoon salt
1/4 teaspoon pepper

Scrub or peel potatoes. In Dutch oven, combine potatoes and enough water to cover. Bring to a boil. Reduce heat to medium-low; cook 15 to 25 minutes or until fork-tender. Drain well.

Return potatoes to Dutch oven or place in serving bowl. Add butter, chives, salt and pepper; toss gently to coat.

Italian noodle..Boil Noodles when done rinse with cold water put italian dressing over them add Cucumber or green pepper or cheese or onions..Whatever u like to it..Its very good all my friends ask me all the time if i go to a cookout or party at there house to make these..And Also sourcream mash potatoes are good to..

Rice Pilaf With Peas And Pine Nuts

2 tablespoons butter
1 onion -- finely chopped
1 1/2 cups long-grain white rice
1 teaspoon ground turmeric
4 cups chicken broth
1 cup frozen peas
salt and pepper -- to taste
1/2 cup pine nuts -- toasted


Melt butter in heavy medium saucepan over medium heat. Add chopped onion and saute until tender, about 3 minutes. Add rice and turmeric and stir 1 minute.

Mix in broth. Cover and simmer over low heat until rice is almost tender, about 15 minutes. Add peas, cover and continue simmering until rice is tender and liquid is absorbed, about 5 minutes.

Season with salt and pepper. Transfer to bowl and sprinkle with toasted pine nuts.

As lemon chicken is more healthy I like serving it with steamed california blend (carrots, broccoli, and cauliflower) vegetables.
