Awesome buffalo wings?!
Awesome buffalo wings?
I’m looking for a really great buffalo wing recipe. I find it hard to get great wings from restaurants. I like it when they’re doused in sauce, almost drowning on the plate, and I like them spicy. When I say spicy, I mean spicy, not just “they have a kick to em” spicy. I also do not have a deep fryer, if that means anything.
Thanks.

BUFFALO CHICKEN WINGS
10-12 chicken wings (2 1/2 lbs.)
1/4 to 3/4 cup hot pepper sauce
1/4 cup butter
Vegetable or peanut oil (for frying)
4 cloves garlic, minced
1 shallot, minced (optional)
1 onion, finely minced (optional)
pinch of sea salt
Fill a heavy bottomed, deep-sided frying pan with at least 1 inch of oil and heat until temperature reaches 400°F.
Split the wings at each joint and discard tips. Rinse and pat dry with paper towels.
Meanwhile, in a small saucepan, melt butter over low heat with minced garlic. (Finely minced shallots or onions may optionally be added at the same time as the garlic.) If you prefer a smoother sauce, a stick blender may be used to smooth it out and blend in the flavors of the garlic, etc. When the garlic is a golden color, stir in the hot sauce. Add a pinch of salt.
When the oil is the correct temperature carefully lower the wings into the hot oil using a slotted spoon or wire basket, and deep fry for about 12 minutes, or until wings are cooked and crispy.
Drain on paper towels. Toss with the hot sauce, coating several times to cover well.
Serving Suggestion: Serve with a side of extra hot sauce for dipping, and a bowl of Blue Cheese Dressing or Ranch dip and celery sticks.
No problem on the deep fryer. Just stick frozen chicken wings on a cookie sheet spray both sides with olive oil. sprinkle garlic powder and cayenne pepper on the oil.
Sauce: Take one can of tomatoe puree, 2 cups of water, 2 habenaro peppers (diced fine), 4 serano peppers (diced fine), 2 jalapeno peppers (diced fine) {If you are a man you can handle this, but if you are a psycho man, and it sounds like you are....} 2 Mazama peppers, 1tsp. Daves insanity sauce. 1TBS. fresh ground black pepper. Mix together or just throw it all in a blender.
Put the wings in a small crock pot, pour the sauce over the wings and set the crock pot to med. low.
24hrs. later you have the grubbenest wings ever.
P.S. you might want to call the fire department before the first bite.
grilled buffalo wings:
INGREDIENTS
3 pounds chicken wings, separated at joints, tips discarded
1 cup Louisiana-style hot sauce
1 (12 fluid ounce) can or bottle cola-flavored carbonated beverage
1/4 teaspoon cayenne pepper, or to taste
1/4 teaspoon ground black pepper, or to taste
1 tablespoon soy sauce
DIRECTIONS
Preheat a grill to medium heat.
In a large pot, mix together the hot sauce, cola, cayenne pepper, black pepper and soy sauce. Add the wings to the sauce - frozen is okay. Place the pot to one side of the grill, so the sauce comes to a simmer.
Use tongs to fish wings out of the sauce, and place them on the grill for 8 to 10 minutes. Then return to the sauce to simmer. Repeat this process for about 50 minutes. The sauce will thicken. When the chicken is tender and pulls easily off of the bone, you have two options. You can dip one last time and serve for sloppy style wings, or serve right off the grill for dryer wings.
buffalo chicken wings:
INGREDIENTS
20 chicken wings, split and tips discarded
1/2 cup butter, melted
1/2 cup red pepper sauce
3/4 cup tomato sauce
1 1/2 tablespoons chili powder
1 teaspoon cayenne pepper
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Bake wings in preheated oven for 30 minutes, or until cooked through and crispy.
Meanwhile, in a small bowl combine melted butter, red pepper sauce, tomato sauce, chili powder and cayenne pepper. Mix together.
When wings are baked, dip in sauce to coat well, then shake off excess and return coated wings to baking sheet. Reduce oven temperature to 250 degrees F (120 degrees C) and bake for another 15 minutes to set sauce.
