My Ma's Chocolate cake - and no you can't have the recipe, it's a family secret!

oooh... ok how about cajon lime tilapia.
this is really good if you are cooking for like two people[i.e. a date or mothers day dinner]
1. preheat oven to 400degrees F.
2. take 2 tilapia filets and cover in seasoning salt andTony's seasoning[you can also be creative and add whatever you think will taste good]
3. wrap in tin foil [seprately] with sliced lime and lime juice.
4. line[glass] baking pan with tin foil[for easy clean up] and put in the tin foil wrapped filets.
5. put them in the oven for 20 mins[or until it falls apart with a fork]

you can also serve with asparagus spears on the side.
1. wash fresh asparagus and cut of the tails[not the spear parts]
2. melt butter in large frying pan and put the asparagus in
3.wait a few minutes and then turn them over
4. when they are done they will be soft and limp

CAJUN CHICKEN PASTA:
2 boneless, skinless chicken breasts, cut into thin strips
2 teaspoons Cajun seasoning
2 tablespoons butter
1 medium green bell pepper, seeded and cut into strips
4 large, fresh mushrooms, sliced
1 green onion, sliced
1 cup heavy whipping cream
1/4 teaspoon dried basil
1/4 teaspoon lemon pepper seasoning
1/4 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon black pepper
4 oz. linguine pasta, cooked and drained
Freshly grated Parmesan cheese

Place chicken and Cajun seasoning in a bowl and toss to coat. Set aside. In a large skillet over medium heat, melt butter. Saute chicken pieces in butter until no longer pink. Transfer to a clean dish; set aside. In drippings in skillet (adding more butter if necessary), Saute bell pepper, mushrooms and onion until limp and lightly browned. Return chicken to skillet and add heavy cream and seasonings. Stir well and heat through. Add cooked linguine; toss to coat; heat through. Sprinkle with grated Parmesan cheese if desired. Note: This will thicken as it cools. Use more heavy cream if you want more sauce.

Cherry Cheesecake
INGREDIENTS
1 (9 inch) prepared graham cracker crust
1 (8 ounce) package cream cheese, softened
1 (14 ounce) can sweetened condensed milk
1/3 cup lemon juice
1 teaspoon vanilla extract
1 (21 ounce) can cherry pie filling
DIRECTIONS
Place softened cream cheese in a mixing bowl; add condensed milk, lemon juice, and vanilla. Beat until well blended. Pour mixture into the pie crust. Chill for 5 hours. DO NOT FREEZE!!!
Pour cherry pie filling on top of pie. Serve.

Baked Apple Crisps

INGREDIENTS
1 cup T. Marzetti's? Old Fashioned Caramel Apple Dip
4 tablespoons butter or margarine, chilled
1 cup quick oats
1/2 cup brown sugar
1/4 cup flour
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
6 large Granny Smith apples
DIRECTIONS
Preheat oven to 350 degrees F. For crisp mixture: Cut 3 tbsp. margarine into oats, sugar, flour, salt, cinnamon and nutmeg until crumbly. Cut 1/3 top off of apples and chop into small pieces. Core out center. Mix remaining apple pieces with crisp mixture. Spread remaining butter inside of apples. Fill apples with crisp mixture, pressing firmly. Bake 20 minutes. Top with apple dip. Bake an additional 20 minutes.

Absolutely Best Brownies

INGREDIENTS
1/2 cup butter, melted
1 cup white sugar
2 eggs
1/2 cup self-rising flour
1/3 cup unsweetened cocoa powder
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup chopped walnuts (optional)
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x8 or 9x9 inch baking pan.
In a medium bowl, beat together the butter and sugar. Add eggs, and mix well. Combine the flour, cocoa and salt; stir into the sugar mixture. Mix in the vanilla and stir in walnuts if desired. Spread evenly into the prepared pan.
Bake for 25 to 30 minutes in the preheated oven, or until edges are firm. Cool before cutting into squares.

Spicy Bean Dip

1 can refried beans
1 can Rotel
1 small can of sliced olives
2 cups shredded cheese
? cup sliced green onions
? cup cilantro, chopped
Green Tabasco
Garlic salt, pepper


1) In sauce pan, heat refried beans until soft.
2) Add rest of ingredients to pan.
3) Cook until the cheese in melted.
4) Serve with tortilla chips

Main dish


Shrimp Enchiladas

?-1 cup butter
2 garlic cloves, minced
? onion, chopped
1 lb white shrimp, deveined, cut in half
1 can green chiles, diced
2 (28 oz.) cans green enchilada sauce
24 corn tortillas
1 package Spanish rice, cooked
2-4 cups cheese, shredded
? cup white wine
1 tsp jalapenos, canned
Green Tabasco sauce
Black pepper, white pepper, garlic salt


1) Sauté onion and garlic in butter and wine until soft.
2) Add shrimp, green Tabasco, green chiles, jalapenos, salt and pepper. Sauté until shrimp are cooked.
3) In separate pan, pour enchilada sauce and heat to low.
4) Dip tortilla in warm enchilada sauce until soft to keep it from breaking.
5) Remove tortilla and fill with shrimp mixture, rice and cheese and roll. Place in pan until all ingredients are used.
6) Pour enchilada sauce over enchiladas, then top with cheese.
7) Bake at 350 for 15-20 minutes or until cheese in melted.

Bacon, Onion Fried Rice

1 cup white rice, uncooked
? package of bacon
1 large yellow onion, chopped
Green onions, sliced
1 garlic clove, minced
Pepper, white pepper, garlic salt, parsley


1) Cook rice according to package, set aside
2) Cook bacon, when done, remove from pan.
3) Sauté onion and garlic in bacon grease.
4) When onion is transparent, add rice and crumbled bacon to pan.
5) Add green onions and seasonings. Cook for about 5 minutes or until the mixture is well absorbed.

Apple Streusel Cheesecake Bars

1 pouch (1 lb 1.5oz) Betty Crocker oatmeal cookie mix
1/2 cup butter
2 packages (8 oz each) cream cheese, softened
1/2 cup sugar
2 tbsp flour
1 tsp vanilla
1 egg
1 can (25 oz.) apple pie filling
1/2 tsp ground cinnamon
1/4 cup chopped walnuts

1) Heat oven to 350. Spray bottom and sides of 13X9 inch pan with cooking spray.

2) Place cookie mix in large bowl. With pastry blender or fork, cut in butter until mixture is crumbly and coarse. Reserve 1 1/2 cups crumb mixture; press remaining crumbs in bottom of pan. Bake 10 minutes.

3) Meanwhile, in large bowl, beat cream cheese, sugar, flour, vanilla and egg with electric mixer on medium speed until smooth.

4) Spread cream cheese mixture evenly over partially baked crust. In medium bowl, mix pie filling and cinnamon. Spoon evenly over cream cheese mixture. Sprinkle reserved crumbs over top. Sprinkle with walnuts.

5) Bake 35 minutes or until light golden brown. Cool about 30 minutes. Refrigerate about 2 hours.
