Cakes with Jello poured in the layers. You poke holes in the cake when it is done and pour jello over it.
Ask your mom and grandma. They should know, they cooked back then.
I think fondue was popular.

Who can forget the ever popular Beef Stroganoff
A classic stroganoff is made with button mushrooms, but shiitake mushrooms add a luscious depth of flavour.
Serves 6
Preparation time: 15 minutes
Cooking time: 15 minutes
Instructions
650g fillet steak, trimmed and cut into thin slivers
Salt and freshly ground black pepper
1 tsp Worcestershire sauce
5 tbsp sunflower oil
50g butter
2 onions, thinly sliced
250g chestnut mushrooms, finely sliced
150g shiitake mushrooms, destalked and finely sliced
3 tbsp Cognac
3 x 142ml cartons soured cream
Juice of ? lemon
Pinch of paprika
Instructions
Season the meat with salt, pepper and Worcestershire sauce.
Put a large heavy-bottomed saucepan over a high heat. Add 3 tbsp oil and when hot, add half the meat. Stir-fry briskly until lightly browned. Set aside in a bowl, add 2 tbsp more oil to the pan and repeat the process with the remaining meat.
Remove the second batch of seared meat and its juices, reduce the heat and melt the butter in the saucepan. Add the onions and gently fry until very soft.
Add the mushrooms to the onions and fry briskly until tender. Add the meat with any juices and pour over the Cognac. Immediately set alight and shake the pan until the alcohol has burnt itself out. Then stir in the soured cream. As soon as it is hot, mix in the lemon juice, season to taste and sprinkle with a little paprika. Serve immediately with fluffy white rice.

These 3 were pretty much synonymous with Berni Inn's and many people first taste of restaurant food in 70's Britain.
Quiche- the little mini ones would be easy to transport, or maybe stuffed mushrooms... ( find some tye-dye napkins/plates to serve on- or scour e-bay for a plate with a mushroom theme- everything was mushrooms! )
INGREDIENTS
6 slices bacon, chopped
1 onion, chopped
3 eggs
3/4 cup buttermilk baking mix
1 1/2 tablespoons chopped fresh parsley
2 cups shredded American cheese
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C). Grease 2 mini muffin pans. In a large skillet over medium heat, fry bacon and onion together for about 5 minutes, or until bacon is crisp. Drain and set aside.
In a medium bowl, beat the eggs. Stir in the baking mix, parsley, shredded cheese, bacon and onion. Spoon into greased muffin cups.
Bake for 10 to 15 minutes in the preheated oven, or until the tops are lightly browned. Allow mini quiches to cool in the pan before carefully removing with a small knife or spatula.
Stuffed Mushrooms
INGREDIENTS:
? 8 to 10 medium mushroom, firm, closed caps
? 1 tablespoon butter
? 2 tablespoons minced onion or green onion
? 1/4 tablespoon Worcestershire sauce
? 1/4 cup soft bread crumbs (see below)
? 1/4 cup shredded sharp cheddar cheese
? 2 tablespoons water
? salt & pepper to taste
PREPARATION:
Preheat oven to 350°. Wash mushrooms quickly under running water; drain on paper towels. Pull stems from mushrooms and chop finely. Melt butter in a skillet over medium-low heat; add chopped mushroom stems and onion. Sauté until tender. Stir in Worcestershire sauce, soft bread crumbs, cheese, salt and pepper. Sprinkle salt over mushroom caps and fill with sautéed mixture, mounding over the top. At this point, you may cover and refrigerate these mushrooms for up to 24 hours. Before serving, put 2 tablespoons of water in a shallow dish and arrange stuffed mushrooms in dish. Bake for about 20 minutes. Serve hot.
