What are good Southern appetizer recipes for a huge get together?

For my grandfather's 60th birthday we are throwing him a big birthday bash. And I have been put in charge of appetizers. My family is pretty much a traditional Southern black family and they stick to certain foods and barely try anything new. LOL. So i want to make appetizers that I know that they will eat but have never tried. Anyone have any ideas what I should make? So far I have fruit trays, blooming onions, and nothing else. I haven't made my decision yet but just trying some ideas out. HELP ME OUT PLEASE!!!!

BARBECUED SPARERIBS APPETIZERS

2 lbs. spareribs
1/2 c. catsup
1/4 c. vinegar or lemon juice
1 tbsp. soy sauce
1 tbsp. honey
2 tbsp. Worcestershire sauce
2 tbsp. sugar
1/2 tsp. chili powder

Have ribs cut lengthwise into 2-inch wide strips. With scissors or knife, cut strips into individual ribs. Place in a cold skillet and brown on all sides over low heat; pour off drippings.
Combine remaining ingredients and pour over ribs. Cover skillet and cook over low heat about 45 minutes, or until meat is tender. Serve with remaining sauce for dipping. Makes about 4 dozen

DOWN SOUTH HOT WINGS

5 lbs. chicken wings
Louisiana brand hot sauce (only this brand will do)
dry Ranch dressing mix (2 packets)

Separate the drumettes and wings; discard the tips. Clean and marinate wings in hot sauce at least 1 hour or overnight.
Preheat oven to 350°F.

Empty wings and sauce into baking pan and sprinkle the top lightly with dry Ranch dressing seasoning (this makes a crust on the top of the wings that is delicious).

Bake at 350°F for about an hour or until wings are done thoroughly. Mix the other pack of Ranch dressing seasoning as directed for dipping.

If this is an outside event, maybe you could try a big craw-fish boil. they are really tasty and fun to eat. I'm not sure where you would go to get them, but if you can find any and a good recipe, then it could be fun for you.

Try putting a ton of "little smokies" (very very very small smoked sausages you can find in a package at any grocery store) in a pot with chili sauce and grape jelly. Bring to a boil and then simmer on low. I usually use 1/2 bottle of chili sauce and 1/2-1 regular size bottle of jelly for one small package of smokies. Of course, you will have to multiply this for 60 people! Some people like more/less of the jelly/chili sauce. There's nothing wrong with tasting while cooking. You can add or subtract to see what is good.
These are best made in a crock pot so they will have time to absorb all of the flavor. I've actually served these after 10 minutes of simmering and everyone loved them.
This sounds odd, but I love fried pickles. Use your favorite batter and fry until golden brown. If you don't believe me that it's good, try it for yourself!

Sliced beef roll, crackers,green veggies and some dip of some sort. Get thin sliced ham and put a green onion in the center after spreading some cream cheese on the ham, fasten with a toothpick. Get some little smokies and put in a crock pot with some bulls eye bbq sauce and mix the bulls eye with a small jar of grape jelly---mmmm good--put out some good hot mustard to go with them. I am from the south and most meals have so many choices that you could choke on them--try not to put too much out for snacks. Hope this helps.

Southern like Louisiana?How about boudain balls,pistolettes,or shrimp kabobs. Then there is hot wings,pretzel sticks with cheese and olives on them,pigs in a blanket,meatballs in BBQ sauce..

simply use Jiffy cornmuffin mix (blue box) mix with water to make little balls and fry in hot oil. These are a good starter for a southern meal.

Jalapenos stuffed w/ shrimp or crab meat, then wrapped in bacon and grilled. Add a little Cream cheese, I make these all the time. They are delicious

Honey, you need to hook it up with some Bacon-wrapped Shrimp! Pick up about 5 or 6 lbs of shrimp and 3 packages of smoked bacon. Cut the bacon in pieces big enough to wrap around the shrimp and use toothpicks to hold 'em together. Throw 'em on the grill for a few minutes until they are done and thats all there is to it! You should have about 8-9 dozen to serve. They will eat those right up and will not last long. They were a hit at my party!
