You can't go wrong with pasta salads, they are so versatile.
Vary the pasta, use corkscrew, shells, macaroni, etc.
Make the pasta in advance, don't let it get mushy. Pour into a strainer and run cold water over it to get the starch off.
Drain well and use or put into a zip-loc bag. Will keep in fridge a couple of days.
I also freeze well-drained cooked pasta, spread it out flat in a large zip-loc and freeze. Take out what you need.
IDEAS-
Pasta, drained tuna (or chicken), pickle relish (I like sweet), & mayo.
Pasta, smoked salmon (my favorite), mayo, lots of black pepper. Sometimes I add some drained capers.
Pasta, mayo, sliced radishes, some broccoli, snow peas, asparagus, olives, etc. Whatever you have on hand.
You can also vary the dressing, instead of mayo use some oil and vinegar and herbs. Or use ranch, Italian, or balsamic dressing.
Or.. invest in a slow cooker and a slow cooker cookbook. It doesn't heat up the kitchen. You can make enough for several days and not have to worry about cooking more than a couple of times a week. Add a salad to your entree and you're good to go!
I usually go outside and eat tree bark.
SUMMER'S HARVEST SALAD
7 ounces macaroni, * see note
1 cup fresh broccoli, flowerets
6 ounces shrimp, cooked
1 small tomato, chopped
1 cup spinach leaves, thinly sliced
1/3 cup red onion, sliced
1/2 cup Italian salad dressing
2 teaspoons salad supreme seasoning
1/2 teaspoon salt
1 dash cayenne pepper
1 boiled egg, grated
Prepare macaroni according to package directions, add broccoli during last two minutes of cooking time; drain. Combine macaroni and broccoli, shrimp, tomato, spinach and red onion. Blend together Italian dressing, salad supreme seasoning, salt and cayenne pepper. Toss dressing with salad mixture. Garnish with egg and sprinkle with salad supreme. Serve immediately or cover and chill. Refrigerate leftovers. 6 to 8 servings.

CRISPY FILLET OF FLOUNDER LIGHT
(DINNER FOR TWO)
4 slices fillet of flounder (may be substituted with other fish)
1/2 c. skim milk
2 c. corn flakes
4 tbsp. butter
Preheat oven at 450 degrees. Rinse the fish with cold water. Use a glass baking pan or Corningware dish. Add the 1/2 cup skim milk so that the fish will not stick to the pan and will keep the fish nice and moist.
Melt the 4 tablespoons of butter and pour over top of the fish. Crush the 2 cups of corn flakes with your hands as you sprinkle over the top of the fish. Place in preheated oven for 15 to 20 minutes, then serve.

1 cup (packed) dark brown sugar
2 tablespoons water Stir sugar and water 1 minute (mixture will bubble vigorously), then stir in:
2 1/2 tablespoons dark rum
1 teaspoon vanilla extract

Ice Cream! or MudPies, or SnoCones! if you don't kno how to make a mudpies, it's easy. get a small cup, plastic disposible ones are great. then crush a bunch of oreos. get those powdered pudding mixes and make some chocolate puding. put a little oreos at the bottom, then fill most of the rest with the pudding, then put oreo on the top. if you want, you can put gommy worms on top. when you eat it, you can mix it all around, or eat it section by section. you can also refrigerate it for 15-30 minutes
Potato or Macaroni salad along w/ a big juicy steak or Pork Chops on the grill.

Recipe for hot dogs: 1 pack hot dogs ,
1 teaspoon mustard
1 half cup ketcup
some brown sugar to taste
1 can bake beans
cook hot dogs ,when done cooking cut up in slices put in pan add ingredients ,simmer on top of stove .

I always have this in the sumer and while one can source all the ingredients at any time of year I just dont as it would ruin the summery feel for it.
smoked mackerel fillet, salad of lettuce, radish, sweet corn, bell peppers, celery, spring onion ( scallions), cucumber, tomatoes, and new ( jersey ) potatoes
I chop the salad so that it is a relativly fine dice, I chiffonade the lettuce ( roll it tightly and cut in fine shreds) flake the smoked mackerel and boil the potatoes with a few sprigs of mint.
add a knob of butter ( go on you know you want to ) to the potatoes and i like it with sweet corn or onion relish,

Okay, this may sound kinda gross, but hang with me on this one! I don't have the exact measurements, but after having this at several picnics/gatherings, I really enjoy it. It's kind of like ambrosia, but without the marshmallows...although there's no reason that they couldn't be added if you want. Just combine the follow ingredients: a containter of cottage cheese, a container of whipped cream, a package of orange Jello in its "powder" form, a can of mandarin oranges, and bananna slices. It's one of those chill-and-enjoy recipies, and it is sooooo good!
