Probably too late for this.

Defrosted chicken breasts. Butterfly them if you can. (slice them horizontally so it thinner)

1 cup flour in a bowl. Add some salt and pepper.
2 eggs mixed in another bowl.
Roll chicken in the flour, egg and then flour again.

If the chicken was Pre boiled:
Heat pan with oil. When you hold your hand over the pan it feels HOT.. and if you drop a small piece of flour in it it boils.
I'd say about a thumb deep level of oil.
Drop the chicken pieces slowly in, and Fry for about
6 minutes till golden.

If uncooked. Shallow fry in oil over Medium heat for about 10 - 15 minutes.

baked chicken

get boneless breasts, pound them so they are even thickness between two pieces of plastic wrap. Then dip them in milk or buttermilk, just enough to cover the meat. Let them sit there while you make a seasoning mix.
Seasoning mix could be whatever you want but it must have salt. I like to add hot red pepper, white pepper, black pepper, thyme, sage and garlic and onion powder. Make a mixture of these dried spices and then put half in the liquid with the chicken and half in an amount of flour that will be sufficient to coat the chicken. Dip the meat in the flour and put it on a plate to set up a bit. meanwhile heat 1/2 inch of oil in a pan the will fit the Chic. i do not truly deep fry, I pan fry. When the oil is hot not smoking( ABOUT 350), pick up the meat, shake it to get excess flour off and place it in the pan. Don't mess with it. let it go 5 minutes flip it carefully with tongs and let it cook 5 more minutes. drain on a wrack with paper toweling on it. yum Hope this helps you out.

You should mix flour, salt, and pepper (garlic salt if you have it, but it's not essential) in a large plastic baggy. Rinse and pat dry the chicken. Some people like to soak the chicken in buttermilk before shaking in the flour mixture, but I never do.

I shake up the chicken pieces. Your skillet oil should be about 1 to 1 1/2 inches deep, and you should heat it up on medium-high heat (about 350-375 degrees). You might have to turn it down to medium after the chicken starts frying.

Don't crowd the chicken in the skillet. Give it lots of room. If the chicken breasts have the bone in, you'll fry it a little longer than if they are boneless. Just continue to cook (I usually just turn once during cooking, but it won't hurt to keep turning them a little more often) until they are golden brown and the juices run clear (usually about 15-20 minutes, depending on the size of the chicken pieces).

If you ever cook dark meat pieces, they need a little longer to cook than white meat (which are the breasts).

Happy frying!

Southern fried chicken

4-6 servings

1 whole chicken, cut into 10 pieces (2 legs, 2 thighs, 2 wings, 4 breast)
4 cups water
3 teaspoons salt
1 cup buttermilk
2 eggs
1 tablespoon Season-All salt
1 cup flour
2 tablespoons cornmeal
2 teaspoons dried oregano
2 teaspoons Season-All salt
vegetable oil or shortening (for frying)

Soak chicken in water and salt at least 2 hours in the refrigerator.
Mix buttermilk, eggs and Season All and dip chicken pieces in this mixture.
Combine 1 cup flour, 2 tbsp corn meal, 2 tsp dried oregano, and 2 tsp Season All in a bag.
Drop two pieces of dipped chicken in the bag at one time.
Shake to coat.
Place on wire rack to rest.
(I place wax paper under the rack to catch any flour that falls off.) Heat a shallow layer of oil or shortening to 360 F in a jumbo chicken skillet (cast iron is great for this job) or an electric skillet.
Place the chicken in the pan, trying not to crowd the pieces.
Cover for the first five minutes.
Check the chicken.
When golden brown, turn.
Cover for the next five minutes.
Remove cover and cook uncovered, turning occasionally, as needed for a total of an additional 20 minutes or until cooked through.
Watch carefully, and don't allow it to get too dark.
If it's frying too fast, reduce heat slightly.
NOTE- the key is to cover in the beginning to start the cooking process inside the chicken, but to uncover during the last part of the cooking time to get the outside nice and crispy and golden brown.

if you fry it it nees to be skin on breasts otherwise you will get hard rubbery chicken.

make an egg wash- crack an egg and mix it up a bit with a little whisk or a fork.

get a plate and put some white flour a good pinch of salt - and an equal quantity of pepper, cracked black for flavour or ground white for appearence, mix everything up on the plate. ( if you fancy a spicy version you can add any and all of the following - paprika or ground chilli or piemento, cracked mustard seeds, cumin )

get the chicken, pat it dry with a paper towel trim any bits that you dont fancy eating and roll it in the flour shake off any excess and then dip into the egg wash.

shake off any excess and then roll and cover well in seasoned flour shake off the excess and repeat to build up a nice crust. leave on a wire rack if you can to dry out a little.

this also bakes well if you fancy something a little more healthy than fried !

Heat a large skillet over medium heat with 2 tbsp of olive oil. Between two pieces of wax paper, pound the chicken breast to about 1/2 in. thick. This helps chicken to cook evenly and quickly. Put 1/2 c. flour into a ziploc bag. Add 1/2 tsp. of salt, 1/2 tsp. of pepper, and 1/2 tsp. of dried basil. Close the bag and shake to combine mixture. Add chicken one piece at a time to the bag to coat chicken. In a bowl, wisk an egg. In another bowl, put 1 1/2-2 c. plain dry bread crumbs. After the chicken is coated in flour, dip in egg then coat with bread crumbs. Place in skillet and cook 4-7 minutes each side. If the chicken starts to blacken, turn down the heat to medium low. Add oil to skillet as needed. This whole thing takes about 20 minutes.

I have a recipie that doesn't use flour, Dip chicken in egg's, then in a bowl Take Potato flake's,Salt,Pepper, and 1 pkg. of ranch mix. Then on 350 fry them....Until crispy....I know it's too late for the recipie but might be something you would like to try...
