What happens to food when fried?

What fat is put into food that you fry?


Answers:
whatever you are cooking it in,unless the fat has been used several times then it will(by heat mutation) contain carcinogenic material

It gets all hot and wet and STICKY!

Hot grease changes food at the molecular level and induces cancer causing changes to the food protein molecules.

It gets very hot. Don't worry all the fat comes out once you eat it, and ends up on your @ss. Enjoy.

Basically the food you are cooking soaks up all the saturated fat from the oil you are cooking it in. That is why you are supposed to use oils lower in Sat fat, like Olive oil or Canola oil.

now, what topgalant said is true. it's pretty interesting. also, just because you fry something in fat, doesn't mean what you fried is automatically soaking up tons of fat, it all depends on temperature. If you have the right temperature for to what you're frying, you can get minimal soakage, but if you're heat is too low, then all you're food will do is soak up fat.
