Rinse, snap off ends, Season with Kosher salt and fresh ground pepper, saute in a little olive oil for only a few minutes.

yes,
cut off abot 1/4 inch from the thick end, use veggie peeler to peel the skin up to the half length of the stem
boil water in a pot (I assume you do not have an asparagus steamer), add 2 TBS olive oil.
Boil asparagus 7 minutes, drain and chill with cold water, drain again
meanwhile chop 2 shallots fine
heat 1 TBSP butter and 4 TBSP olive oil in a pan, sautee shallots, add 2 TBSP Italian style bread crumbs, sautee till golden brown, arrrange asparagus on a plate, pour the bread crumbs over it, enjoy

personally i like to steam it then melt shredded cheese over it...

two ymummy recipes
1. just steam the asparagus with salt until it is tender
2. saute it in some olive oil and garlic
just remember that when you clean the asparagus, start at the bottom and bend lightly, where it breaks naturally is where the bottom should be trimmed
also remember that it will make your pee smell. I once served asparagus at a party and had all the men checking for plumbing leaks cuz it smelled so bad!

Yes. This is a family favorite. Cut the bottom off the asparagus (only about 1/4 inch!), as it can be dry or bitter. Wrap it in plastic wrap or waxed paper with some butter and a little salt and pepper. Microwave it for a few minutes, and VOILA! You have a healthy, delicious side dish that compliments almost any meal.

Phyllo Wrapped Asparagus

8 or 9 asparagus spears, depending on size
1/2 (16-ounce) package frozen phyllo dough sheets, thawed
1/4 cup butter, melted
1/4 cup finely grated Parmesan

Preheat oven to 375 degrees F.
Snap off the tough ends of the asparagus. Unwrap the phyllo and cut the stack in half lengthwise. Reserve 1 stack for later use. Cover the phyllo with a damp towel to keep it from drying out. Take 1 sheet of phyllo and brush lightly with some melted butter. Sprinkle with some Parmesan. Place 2 to 3 asparagus spears on the short end of the sheet. Roll up, jelly-roll style. Place each piece, seam side down, on a baking sheet. Brush with more melted butter and sprinkle with more Parmesan. Repeat until all the asparagus spears are used up. Place baking sheet in oven and bake for 15 to 18 minutes, or until golden brown and crispy.

Balsamic & Basil Asparagus


Ingredients
1/4 cup Balsamic & Basil Dipping Oil
1 tsp. butter
1 lb. asparagus, cut into 2-inch pieces

Directions
Heat first 2 ingredients in large skillet; add asparagus. Saute for 5-10 minutes or until asparagus is crisp-tender. Makes 4-5 servings.
