I use 1/2 cup of small curd cottage cheese, half cup of sliced strawberries, 2 tablespoons of chopped walnuts. Drizzle with honey and stuff a whole wheat pita with the mixture. Its delicious, and about 250 calories This is an ediets recipe. They also say to add 2 tablespoons of wheat germ

I dont know whether you want a recipe to make cottage cheese or recipes that use cottage cheese, so here are some that use cottage cheese:

COTTAGE CHEESE PANCAKES

1 cup cottage cheese or ricotta
4 eggs, beaten
1/2 cup flour, sifted
6 tablespoons butter, melted
1/2 teaspoon vanilla
1/4 teaspoon salt

Using a potato masher or hand mixer, mix cottage cheese or ricotta with other ingredients.
Heat a griddle or frying pan. Melt a pinch of butter on the surface of the pan and swirl around to coat evenly, or alternatively, use a paper towel dampened with vegetable oil to wipe the hot pan down.

Spoon the mixed batter onto the hot surface, creating pancakes 3 inch diameter pancakes.

Turn only once to cook both sides evenly.

Serve with fruit in its own syrup (such as strawberries, blueberries, peaches or pineapple), or top with applesauce, fruit jam or maple syrup along with a pat of butter.


SHELLS AND COTTAGE CHEESE

cottage cheese
box of small shells (noodles)
butter
salt and pepper

Boil shells as directed on box. Drain. Return shells to pot, add cottage cheese and butter, salt and pepper to taste. Mix well. You can add more cottage cheese on top of individual servings or serve as is out of the pot.
Great quick meal that kids love!


COTTAGE CHEESE SALAD

1 box Jello (any flavor)
1 16 oz. small curd cottage cheese
1 12 oz. can of crushed pineapple
1 10 oz. tub of whipping cream

Drain the pineapple. Mix the cottage cheese and whipping cream together, until well blended. Next, stir in the pineapple. Mix well.
Stir in Jello mix. Mix well until Jello is completely dissolved. Chill 4 hours prior to serving.

right out of the container... little salt, little pepper...

Cottage Potatoes

3 large Idaho potatoes
1/4 cup (1/2 stick) butter
1 cup cottage cheese
1/2 onion, diced
Salt and pepper
Paprika

Preheat the oven to 350 degrees F.
Scrub the potatoes, slice them, and put in a pot with water to cover. Boil the potatoes until tender, then drain and mash them with 2 tablespoons of the butter. Add the cottage cheese, onion, and salt and pepper to taste. Stir the mixture gently, and then put in a greased casserole. Dot with the remaining 2 tablespoons of butter and sprinkle with paprika. Bake, uncovered, for 30 minutes.

Cottage Cheese Biscuits

2 cups all purpose flour
1/2 teaspoon coarse salt
1 tablespoon baking powder
5 tablespoons unsalted butter, cold, cut into ? inch pieces
1 16-oz. container low fat cottage cheese

Preheat oven to 450. In a large bowl or the bowl place flour, salt and baking powder. Stir until combined. Add butter and mix until it?s the size of small peas. Add the cottage cheese and stir until just combined. Using a large soupspoon, drop onto a non-stick cookie sheet. Bake until golden, about 12-15 minutes. Serve immediately.

Potato and Cheese Filled Wonton Skins

Potato and Cheese filling:
4 tablespoons unsalted butter
1 onion, finely chopped
2 baking potatoes, boiled & mashed with 2 tablespoons butter
1/4 cup cottage cheese, pureed in a blender
2 ounces Cheddar or Muenster cheese, finely chopped
Salt and pepper

Heat butter in a skillet and saute onions until soft but not golden. Remove to a bowl and mix with mashed potatoes, cottage and cheddar cheeses.

To fill: Take out a few wrappers, leaving others under a cloth to keep moist. Center a teaspoonful of filling of your choice on wrapper. Fold dough over the filling to form a semi- circle. Brush bottom edge of semi- circle only with water and press top edge over the top. Pinch the edges together well so that they come together. You can make top "pleats" or not, as you wish. Repeat with the other wrappers until you have created as many "stuffed pastas" as you wish. Freeze on trays, then stack in freezer bags, in portion sizes which make sense for your family. You can boil them straight from the freezer.

To boil the meat stuffed pasta: Bring 2 cups each water and chicken broth to a boil. Add 2 grated carrots, 1 cup shredded bok choy or cabbage and simmer 2 minutes or until vegetables are tender. Add meat dumplings and cook gently so filling does not explode for 3 to 4 minutes or until meat is cooked through. Serve with a ladleful of broth and vegetables, garnish with sliced scallion of chives. . To saute meat dumplings: Heat 1 tablespoon each of sesame and vegetable oil in 12-inch skillet. Add 12 dumplings and saute until crisp on one side, about 5 minutes. Cover and steam another 2 minutes or until filling is cooked through. Remove to a plate; fry more if needed. Serve with a sauce of soy mixed with rice vinegar, sugar and scallion. Note you can also deep fry them for about 2 to 3 minutes or until golden. To boil potato stuffed pastas: Boil in salted water for 7 to 8 minutes or until they float to the top. Drain and serve with melted butter and or sour cream and chopped chives.

To fry potato stuffed pastas: Saute in a mixture of butter and oil for about 3 minutes per side or until each side is delicately crisp and interior is hot. Serve with butter and grated cheese or sour cream and more cottage cheese.

I know this sounds gross but our family loves it. The cottage cheese makes it unique.

My mother's concoction
1# hamburger
chopped onion
2 boxes of kraft macaroni and cheese- prepared according to box. I add a little more milk.
shredded cheddar cheese
cottage cheese

Brown hamburger with chopped onion. Drain grease.
While cooking hamburger, make mac and cheese according to the boxes.
Mix hamburger, mac and cheese, milk, cheddar cheese, and cottage cheese together.

dannon lowfat anyflavor yogurt at room temperature, top with granola, top with two tablespoons cottage cheese, top off with kashi lean cereal, two drops of honey, mix and eat.

Confetti Salad
One carton cottage cheese
2 tomatoes
1 onion
1 green pepper
1 cucumber
1 jalapeno
Chop all veggies and mix with with cottage cheese. Season with salt and pepper.
Great for summer picnics.
