4 large sweet potatoes
2/3 cup packed brown sugar
2 tablespoons orange juice
1 teaspoon orange zest
1/2 teaspoon freshly grated nutmeg
2 cups shredded coconut, sweetened
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1 large marshmallow per potato ball

Preheat oven to 350 degrees F.

Bake the potatoes until tender, then peel and mash them. Stir in the brown sugar, orange juice, zest and nutmeg. In a separate bowl, toss the coconut with the sugar and cinnamon. Press mashed potatoes around each marshmallow, creating a 2 to 3-inch diameter ball. Roll the balls in the coconut mixture. Bake for 15 to 20 minutes. Watch carefully for the last few minutes of cooking; the expanding marshmallows can cause the potato balls to burst open

Yummmy...all my favorite flavors. I'll try this this weekend and let you know but it doesn't seem like it could miss.

Oh my. I think there is too much going on there for my tastes. Orange and coconut and brown sugar and marshmallows??

I am going to have to rate it a 20% out of 100. Doesn't sound too great.

Looks like about 3 x the sugar needed, I would add 1/4-1/2 tsp of ground ginger to the mixture , a big pinch of salt and about 1c of cake crumbs for glue

Sounds very good. All the ingredients should go together well. I don't see how it could be bad. Very unique :)

it's sounds good but why don't she use something else than sweet potatoes like fresh cassava you can find it at Asian or African stores it looks like a big potatoes
