HAMBURGER BAKED BEANS

Brown one pound hamburger with 1/2 cup chopped green pepper and 2 tablespoons chopped onion. Add dash of garlic salt. Add: 1/2 c. brown sugar, packed 2 tbsp. molasses 2 cans pork & beans (No. 2 1/2 size) 3/4 c. catsup 1/2 tsp. black pepper 1 tsp. dry mustard
Mix well. Bake in oven at 325 degrees for 1 hour, uncovered.

Easy Strawberry or Peach Shortcake Squares

This recipe is an easy way to make strawberry (or peach for that matter) shortcakes. The cakes are baked in a square baking pan then cut into individual servings. If you want to feed a bigger crowd, double the recipe and bake in a large rectagular baking pan.

I like to use this recipe to serve dessert to a crowd at a picnic. I transport the whole cake, wrapped in foil, and strawberries separately. It's easy to assemble at the picnic, or cut the squares and let the guests make their own. When at home, I whip my own cream, although I must confes that Redi-Whip makes picnic dessert topping easier.






4 C strawberries, hulled and sliced

OR

4 C sliced peaches
1/4 C sugar

Cake
2 C flour
1/3 C sugar
1 T baking powder
1/4 tsp. salt
1/2 C butter
2/3 C half and half
1 egg, beaten


2 C whipped cream (or 1 can Redi-Whip?)


additional sliced strawberries or peaches for garnish




Serves 6

Combine sliced fruit and 1/4 cup sugar, mix well and chill.

Preheat oven to 450° F. Lightly grease an 8 inch square baking pan.

Combine flour, sugar,salt and baking powder. Cut in butter with two knives or a pastry blender until the mixture resembles a coarse meal.

Mix half and half and egg and mix well. Add to flour/butter mixture and stir just until moistened. Spread the mixture in the bottom of the prepared pan and bake for 15 minutes or until golden brown. Cool for 5 minutes before transferring cake to a wire rack to cool completely.

To assemble:
Cut the cake into six squares and cut each square in half horizontilly. Place bottom half of shortcake, cut side up, on plate, top with prepared fruit and dollop of whipped cream, top with second half of cake, cut side down and additional fruit and whipped cream. Repeat for remaining squares.

How To Make a Watermelon Basket

With this simple fresh fruit salad recipe, the presentation is everything. Watermelons are great creative foil for foodies.

I love to make this salad for picnics because at the end of the day there are no dishes to take home. Store extra fruit salad in a large plastic zipper bag in your cooler chest to replenish the basket as needed.

We used a garnishing tool to make the cuts in our melon. If you don't have one, dig out the Halloween Jack-o-Lantern carving knives and use these instead, or a sturdy pairing knife. It will be slightly more work, but the results will still be great.





You Will Need

1 watermelon

for the rest of the fruit, mix and match as you see fit:

cantaloupe
honeydew melon
seedless grapes
peaches
nectarines
strawberries
blueberries
raspberries
blackberries
plums
oranges
etc.

for garnish:
lemon, lime or orange slices
grapes, melon balls or cherries
toothpicks

tools:
garnishing tool (pictured at right)
OR
serrated knife (jack-o-lantern carving knives work well)

melon baller
OR
simply cut the fruit into bite sized chunks

BAKED BEANS COOKOUT STYLE

1 (32 oz.) can pork and beans, not drained
1/2 c. onion, chopped
1/4 c. green pepper, chopped
1/2 tsp. salt
1/4 tsp. pepper
1/3 c. prepared mustard
1 c. catsup
1 c. brown sugar

Mix all ingredients together in a 2 1/2 quart baking dish and bake in 350 degree oven for 1 1/2 hours.
Very good for a cookout with fresh fruit and corn-on-the-cob.

Make a chees ball. You need 3 ingredients then the crackers.............1 8oz cream cheese.
1 jar (4 oz) old engllish cheese
1/2 tsp of garlic powder or garlic salt to taste......Smash cream cheese on a plate, Put old english cheese on top and blend together. Add garlic seasoning and blend together. NOW Put spread on a clean plate,lay som Wheat Thins on the top and cover with plastic wrap. and take a box of original Wheat Thins. Don't forget a plastic knife or two....Enjoy

Well, I am also going to add baked beans as a suggestion. Here's my recipe.
Sorry I dont have exact measurements.
Baked Beans
4 or 5 cans of campbells pork and beans then add ketchup, mustard, brown sugar, chopped onion, karo syrup, and lil smokies and bake them in the oven for 35-45 minutes at 350'. Talk about delicious.
Sometimes i use beef smoked sausage or kielbasa pieces instead of the lil smokies. =0)

Hashbrown Potato Casserole
2 pounds. frozen hashbrowns potatoes, thawed
10 oz pkg cheddar cheese, grated
8 oz. sourcream
1 can cream of celery
1 tsp. salt
1 tsp. pepper
1/2 stick butter, melted
Mix all other ingredients together. Put in greased casserole. Bake at 350' for 45-55 minutes.

Here's an easy dish for you:
"Tamale Pie"
2 lbs. ground beef
16 oz. can tomato paste
Green Onions - sliced
Bell Pepper {any color} - diced
2 Cans Whole Kennel Corn - drained
Sharp Cheddar Cheese
King Size Fritoes
Black Olives
Chili Powder
Taco Mix

Directions:
Brown the ground beef and drain, Add tomato paste, green onions, bell pepper and corn to ground beef, let it simmer for about 15 minutes, then add the chili powder and taco mix, let it simmer for 20 more minutes. While the meat simmer, grate the cheese, get a casserole dish {with a cover}, after 20 minutes turn off the meat mixture, in the casserole dish you're going to alternate between the meat mixture, fritoes, cheese and olives {you don't have to use olives if you don't want to}. First put down a layer of fritoes, then add a layer of the meat mixture, then another layer of fritoes, then a layer of cheese, keep doing that until the casserole is full. Put it in an 350 degree oven for about 15 minutes or until the cheese melts. You can even use an aluminum tray, that way you don't have to worry about washing it. When i cook this for my family i usually have a green salad and garlic bread with it. Hope you have fun making this. Good Luck!

Chili Cheese Frito Corn Salad

3 cans corn, drained.
1 diced red onion
1 diced green pepper
2 cups shredded cheese
1 cup Miracle Whip salad dressing

Mix together, refrigerate. Right before serving toss in Chili Cheese Fritos. You WILL get many compliments.

Fruit salad is always a hit. The one I use has a combination of canned and fresh fruits, but you can always use just fresh or just canned.

1 small can mandarin oranges, drained
10 strawberries, cut in half, stem removed
2 cups, cubed cantaloupe
1 can sliced peaches, drained
1/2 cup green grapes, seedless, sliced in half if desired
1/2 cup red grapes, seedless, sliced in half if desired
1 can pineapple, drained, juice reserved
8oz container strawberry yogurt
1 1/2 cups cool whip

Place fruit in large bowl. In seperate bowl add yogurt, cool whip, and 1/2 cup pineapple juice. Whisk until smooth. Toss with fruit.


Everybody expects cole slaw, but I don't like creamy slaw. Here's something different.

2 pkg slaw mix (already has carrots and cabbage shredded)
1 green pepper, sliced thin
1 red pepper sliced thin
3 green onions, chopped

Toss together in bowl

Dressing

5 tablespoons vinegar
2 tablespoons sesame oil
3 tablespoons creamy peanut butter
3 tablespoons soy sauce
3 tablespoons brown sugar
1 1/2 tablespoons minced garlic

Whisk together until smooth. Just before serving, toss with slaw mixture. Can also add chow mein noodles just before serving.


Broccoli Salad

1 pkg real bacon pieces, do NOT use bacon bits
2 heads fresh broccoli, chopped
1 1/2 cups sharp Cheddar cheese, shredded
1/2 large onion, chopped

Mix in large bowl

Dressing

1/4 cup red wine vinegar
1 Tbs. white sugar
2 teaspoons ground black pepper
1 teaspoon salt
2/3 cup mayonnaise
1 tsp lemon juice

Mix dressing until smooth. Toss with broccoli mixture.


Greek Veggie Salad

2 large, ripe tomatoes, quartered
2 zuchinni, halved, then sliced
1 yellow pepper, chunked
1 green pepper, chunked
1/2 red onion, sliced
1/3 cup black olives
1/3 cup feta cheese, crumbled

Toss together

Dressing

1/3 cup olive oil
1tsp garlic powder
1 tsp dried oregano
1 tsp dried basil
3/4 tsp pepper
3/4 tsp salt
3/4 tsp onion powder
3/4 tsp Dijon-style mustard
1/2 cup wine vinegar

Mix, toss with veggies. If you want to make it a little more substantial, you can always add a couple of cups of cooked pasta, like penne.

I was just giving you something that you could BBQ, but I just realized you maybe were looking for a side dish.

Here's one I saw on the cooking show and made today. I would recommend it to someone who was new to cooking. It's rated as easy on the website.
Broccoli Cole Slaw

I tried it and it was very good.

This is too yummy and is always one of the first things to go. It's really easy to make with minimal cooking and prep time. We always have this at our cookouts (home and work).

Veggie Pizza
2 cans refrigerated croissant dough (next to refrigerated biscuits)
Bag of precut, precleaned broccoli/cauliflower florets from produce aisle (usually near bagged salad)
2 8 oz. boxes of cream cheese, softened
1 packet Hidden Valley ranch dip/dressing mix
4 oz. finely shredded cheddar cheese


To make the crust, open croissants and lay flat to cover bottom of cookie sheet. Pinch the edges together. Cook until lightly browned using temp. from package for about 7 minutes.
While the crust cooks, mix Hidden Valley mix and cream cheese. Once the crust is cooled, spread croissant crust with cream cheese mixture. Top with broccoli, cauliflower and cheddar cheese. Cut into squares. You can make this the night before and store in your fridge.

Here's a Cheese Ball Recipie sure to please, I have a hard time making things to and this is so simple I have had rave review's, I have used it for holiday's and baby shower's.

I box of Cream Cheese
1 package of ranch mix
1 jar of bacon bit's

Mix Cream Cheese & Ranch Mix.
Then Roll in Bacon Bit's, Then Refridgerate.

Your done!

Or you could try Pasta Salad

1 box of Rotinin Noodle's Boil them...
4 egg's Boiled

In a bowl combine following ingredient's:Let them set for 15 min's.
1 large tomato diced
1 teaspoon of Sweet Basil
1/2 small jar of Sweet Relish

In another bowl Chop following item's
1 pkg. of boiled ham
1 cucumber
1 Sweet Vidala Onion

When noodle's & egg's are done Add noodle's to `1st bowl of ingredient's, Mix, Slice egg's into mix, And Add 1/2 Jar or coat well , & mix well , Cover and refridgerate...

Or Mexican CornBread

1 Bag of CornMeal
Follow there direction's to make Corn Bread
When You make the mixture Add
1 diced onion
1 can of Creamed Corn
2 Jalapeno Pepper's sliced
1 small bag of Shredded Chedar Cheese

Bake and your done...
