Easy Caesar Dressing

1/2 cup freshly grated Parmesan
1/4 cup plus 2 tablespoons olive oil
1/4 cup plus 2 tablespoons vegetable oil
1/4 cup fresh lemon juice
2 garlic cloves
1 teaspoon Worcestershire sauce
Salt and freshly ground black pepper to taste
Combine all ingredients in blender or processor. Blend until smooth.
Season to taste with salt and pepper.
Makes 1 cup.

An easy Caesar dressing recipe, made with mayonnaise, Italian dressing, and other seasonings.
INGREDIENTS:
3/4 cup prepared Italian dressing
1 tablespoon grated Parmesan cheese
1 tablespoon sugar
1/3 cup mayonnaise
1 teaspoon soy sauce, fish sauce, or anchovy paste
PREPARATION:
Combine all ingredients; whisk until well blended. Keep refrigerated for up to 5 days.
Makes 1 cup.

1/4 cup plus 2 tablespoons olive oil
1/4 cup plus 2 tablespoons vegetable oil
1/4 cup fresh lemon juice

1 teaspoon Worcestershire sauce

Combine all ingredients in blender or processor. Blend until smooth. Season to taste with salt and pepper. (Can be prepared 2 days ahead. Cover and refrigerate.)

Awesome & Easy Caesar Dressing:

5 min 5 min prep
6-8 servings

1/2 cup parmesan cheese
3/4 cup vegetable oil
1/4 cup lemon juice
2 eggs
1/2 teaspoon salt
1 dash pepper
2-3 garlic cloves

1. Throw all ingredients into your blender and blend for about 30 seconds.
2. I usually have a taste, on a piece of romaine, and adjust at this point.
3. (You may like it a bit cheesier or more lemony etc).

hope you got a food processor:
add into bowl:
2-4 garlic cloves, salt and pepper, pulse.
add 1-2 tbsp lemon juice,1tbsp worcestershire, and about 1oz. of achovy fillet(essential for real caesar), pulse until blended.
add two eggs, 4oz parmesan cheese, 4tbsp balsamic vinegar, 4tbsp red wine vinegar, 2 tbsp dijon and blend.
you'll need about 3 cups of olive oil to emulsify it from here. slowly add the oil while blending the mix, after a few seconds you can pour a steady stream into the processor bowl. This isn't that easy, but this is the real deal (i'm a chef). I like to add Louisiana hot sauce to mine to give it some kick. Adjust the salt and pepper as needed. The dressing should taste tangy and strong so when you add it to romaine (about 90% water) you can actually taste it.

This makes about1-2 quarts, you can store it for about 5-7 days in a tight lid container. (Don't forget the croutons!)
