How long can I keep banana bread batter in the fridge?!


Question:

How long can I keep banana bread batter in the fridge?

I was interrupted making my banana bread and I couldn't bake it. So I stored the batter into the fridge and it's been two days. Can I still bake it and have it taste good?

I listened to Jim, added some extra baking soda and the bread turned out fantastic. Thanks everyone for your advice except for the asshole who said that it wasn't going to work.

derek--- I suggest that you add to the batter the same amount of soda and baking powder as you first did ,I'm sure the first leaven's you added has depleted it self in two days. Hope this helped you. jim b

Overnight would be ok but it may go flat-levening agents usually react right away and then stop working so it is a good idea to only make what you need

Not much longer than a few minutes, I would say.

Are you kidding me???

It should be ok, I would give it a shot. What's the worse that could happen - it won't rise and you have to toss it. Good luck!
