Moon Chai

With so many spices in this chai recipe, you might want to blend them ahead of time for quicker preparation. Either way, the extra effort is worth it for this zesty chai recipe.

10 pieces of ginger, 1-inch
4 cinnamon sticks, broken
1 tsp green cardamom pods
2 1/4 tsp black peppercorns
1 tsp cloves, whole
1/2 tsp fennel seeds
1/2 tsp licorice root
1/2 tsp allspice
5 cups water
3 tbs honey
Milk, to taste

Combine everything except for milk and honey, in a saucepan. Cover pot and simmer for 45 minutes. Remove the pot from heat, and let sit for another 35 minutes (covered). Strain out the spices and add honey, and milk if desired.

Chai Tea serves 2

INGREDIENTS

2 cups water
1-1/3 black tea bags
3-1/4 whole cardamom seeds
2/3 cinnamon stick, broken in half
1/4 teaspoon black peppercorns
1 tablespoon white sugar

DIRECTIONS

In a saucepan, bring water to a boil. Add the tea bags, cardamom seeds, cinnamon, and black pepper, then return to a boil. Immediately stir in sugar.
Remove pot from heat and let stand for 5 minutes

SInce giving up drinking coffee a few years ago I began drinking chai tea. It is now the drink of choice for my whole family. Here is my recipe:

Ingredients:

2 Teaspoons English breakfast tea
1 Cinnamon stick
3 Cardamom pods
2 Cloves
1 Teaspoon sugar
2 Cloves of black pepper
1 Bay leaf
400mls whole fat milk


Method:
Put English tea into a small saucepan.

Break up the cinnamon stick, bruise the 3 cardamom pods and add to the saucepan along with the 2 cloves, sugar, pepper and bay leaf. Add the milk.

Boil and reduce down to thick syrup, reducing the liquid by half (being careful not to let the milk catch on the bottom of the saucepan). Strain.

You should end up with thick aromatic syrup a similar consistency to condensed milk.

For 2 cups of chai:

In a pot, heat 1 cup water & 1 cup milk.

Add 1/5 teaspoon Chai Masala

Add 2 teaspoons Tea Leaves.

Stir occasionally & bring to a boil.

Strain & add sugar or honey to sweeten and enjoy!


Prepared chai will have a golden brown hue.
For a milder taste, use less Chai Masala.

Milk may burn if the heat is too high. Be sure to brew at a medium-high temperature.

Stainless steel or non-stick pots work well for making chai. They conduct heat well and are simple to clean.

The type of milk used may vary from fat-free to homogenized milk, depending on your preference.

For a more intense flavor, grate fresh ginger into chai as it brews.
Store chai masala and tea leaves in a cool, dark place.

Keep closed to prevent air from infiltrating.

Use only dry utensils with chai masala and tea leaves.

Brewed chai can be kept for an hour, but should be strained immediately to prevent an excessively strong tea flavor.
