What do I make gravy with?!

Question:

What do I make gravy with?

I don't have the pre-packaged box, any idea on how to make it from scratch. I've heard vegemite or stock powder..

Answers:
There are several different kinds of gravy so I hope one of these is what you need

LIGHTNING GRAVY

1 1/2 tablespoons beef, chicken, or pork soup base
1 tablespoon fresh or 1/2 as much dry parsley
1/4 teaspoon black pepper
2 tablespoons Wondra flour
1-2 tablespoons butter
1/2 tablespoon olive oil (or meat drippings)
1/2 teaspoon onion powder (or onion soup mix)
1/4 teaspoon garlic powder (or 2 cloves minced garlic)
1 1/2 cups cold broth or water
1/4 onion, thinly sliced or minced

This is a casual, quick, gravy to help dress up weekday meals. Use it when you don't have the makings for gravy, or to top mashed potatoes or rice, or even to dress up a store-bought roast chicken.
Feel free to vary quantities as desired. Add more flour for a thicker gravy, or more broth to thin it out. Or try using vegetable broth for a different taste.

Stir all ingredients together in a large pyrex bowl or measuring cup and microwave for 5-7 minutes, stirring occasionally. Let stand until sauce thickens.

Add a pinch of sage to chicken gravy, or a spoon or so of ketchup to beef gravy or tomato sauce for pork gravy.

PERFECT GRAVY

4 tablespoons pan drippings
4 level tablespoons flour
2 cups water
1/2 teaspoon Gravy Master
1/2 tablespoon beef, chicken or pork soup base
Salt and pepper to taste

Start with 4 tablespoons of pan drippings. Blend in 4 level tablespoons flour, using low heat and stirring until smooth. Slowly stir in 2 cups water and additional pan drippings. Boil Gently 5 minutes. Stir in 1 teaspoon Gravy Master. Add Salt and pepper to taste. Makes 2 cups Perfect Gravy.

SOUTHERN STYLE SAUSAGE GRAVY

Gravy:

1/2 pkg. mild sausage
2 tbsp. butter
2 tbsp. all purpose flour
5 cups whole milk
1 1/2 tsp. salt
1 1/2 tsp. pepper

Biscuits:

Any biscuits will work however, I find that buttermilk biscuits are best.

Cook sausage until done. Add butter and flour. Simmer for a few minutes on medium heat stirring frequently. Add milk, salt and pepper. Simmer over medium-high heat stirring constantly until desired thickness.
Spoon gravy over biscuits and enjoy

make a rue with some butter or oil and flour. cook for a few minutes until floury taste is cooked out. slowly add stock/broth/pan juices, whisking constantly. add milk if you want. bring to a boil to come to full thickness. turn down heat and stir often, as not to burn.

just use any kind of meat stock, i imagine even canned broth would work. bring it up to heat and then add a slurry, made with either more stock or water, mixed with a couple tablespoons of cornstarch. make sure the slurry is mixed really well, so theres no clumps of starch in it. bring that all to a boil and the cornstarch will thicken it all up, for a nice meaty gravy.
