Do you know any good guacamole or salsa recipes?

i have 2 main recipes that I use for these, but was wondering about some others.

i like it chunky, but you can mash it to your preference.

Guacamole Recipe

4 ripe avocados
1 lime, juiced
1/2 medium red onion, chopped
1 garlic clove, minced
1 vine-ripe tomato, diced
1 big handful fresh cilantro leaves, finely chopped
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
Kosher salt and freshly ground pepper

Halve and pit the avocados; scoop out the flesh with a tablespoon into a mixing bowl. Mash the avocados with a fork, leaving them still a bit chunky. Add the remaining ingredients, and fold everything together to gently mix.

Lay a piece of plastic wrap right on the surface of the guacamole so it doesn't brown and refrigerate for at least 1 hour before serving.

Black Bean Salsa Recipe

2 (15-ounce) cans black beans, rinsed and drained
1 (17-ounce) package frozen whole kernel corn, thawed
2 large tomatoes, seeded and diced
1 large avocado, peeled and diced
1 small onion, diced
1/8 to 1/4 cup chopped fresh cilantro leaves
2 tablespoons lime juice
1 tablespoon red wine vinegar
Salt and pepper

Mix all ingredients thoroughly in a large bowl. Cover and chill overnight. Taste and add salt, pepper, or more lime juice as necessary. Serve with tortilla chips as an appetizer, or with grilled chicken breast as a meal.

Salsa Fresca

4 ripe tomatoes, chopped
1/4 red onion, chopped
1 jalapeno, minced
8 cilantro sprigs, chopped
3 garlic cloves, minced
Juice of 1 lime
1/4 cup olive oil
1/2 teaspoon salt

In a mixing bowl, combine all ingredients together. Toss thoroughly. Let stand 15 minutes before serving.

My sister-in-law cubes her avocados,adds diced tomatoes,chopped cilantro,adds fresh corn(from the cob)one chopped jalapeno, a small red onion and the juice of one lime,salt and pepper to taste serve with chips.

I added small shrimp to mine to kick it up a notch.Delicioso.

How about mixing the 2 !!!

Salsa:

1 can (14.5 oz) Muir Glen? organic fire roasted or plain diced tomatoes, well drained
1/4 cup chopped onion
2 tablespoons chopped fresh cilantro
1/4 teaspoon coarse salt (kosher or sea salt)
1 clove garlic, finely chopped
1 small fresh jalape?o chile, seeded, finely chopped

Guacamole:

3 ripe large avocados (about 1 1/2 lb) pitted, peeled
2 tablespoons fresh lime juice
1/2 teaspoon coarse salt (kosher or sea salt)
1/2 teaspoon red pepper sauce
1 clove garlic, finely chopped

In medium bowl, stir together salsa ingredients.
In another medium bowl, place avocados; coarsely mash. Stir in remaining guacamole ingredients. Spoon guacamole into shallow serving bowl; top with salsa.

Serve with tortilla chips as desired.

Makes 12 servings (1/4 cup each).


NICOLE'S AMAZING GUACAMOLE

4 avocodos
2 tbsp. olive oil
1/2 sm. onion minced
2 sm. cloves garlic minced
1 sm. tomato finely chopped
1 tbsp. cilantro finely chopped
1/2 tsp. cumin
1/2 cup sour cream
1 tbsp. lime juice
1 tsp. red pepper flake (to taste)
salt and pepper
shot of hot sauce

I know this seems like a lot of ingredients. But most of the ingrdients you have in your refrigerator on a regular basis. And if you want to make it and can not find something around the kitchen...omit it.
Mash avocados and then add rest of ingredients. Mix well. Enjoy!!!


FIERY FRUIT SALSA

Sweet mango is a welcome addition to this spicy chipotle salsa.

1 can (14.5 oz) Muir Glen? organic fire roasted diced tomatoes, drained

1/4 cup sliced green onions (4 medium)
2 tablespoons chopped fresh cilantro
1 tablespoon fresh lime juice
1 teaspoon finely chopped chipotle chile in adobo sauce
1/4 teaspoon coarse salt (kosher or sea salt)

In food processor, place drained tomatoes. Cover and process until coarsely chopped. Place in medium bowl.
Stir in remaining ingredients.

Serve with meat or fish, or with tortilla chips as desired.

Makes 6 servings (1/3 cup each).

Do-Ahead: Make the salsa up to 24 hours ahead of time, and store tightly covered in the refrigerator.

My family likes our guacamole without a lot of add-ons. Sometimes I will just smash some ripe California avacados and add some lime juice and occasionally some cilantro.
As for salsa, I get out my food processor, add some fresh tomatoes, onion, and a variety of peppers (adjust to your level of heat) and some fresh cilantro. Chop this up with the food processor and there you go. My family loves this recipe.

I like really fresh tasting salsa.

2-3 large, very ripe tomatoes, seeded and diced
2 cloves garlic, minced
1 lime, zest and juice
salt
pepper
1-2 tbsp cilantro, chopped (optional)
1 red chile, seeded and chopped, (optional - you could use red pepper flakes or cayanne pepper as well)

If I want a thicker salsa, I'll use a couple of canned tomatoes and their puree. Gives you texture closer to a sauce...like store-bought salsa. But I almost never do this. It's also remarkably good on pasta!

Replace the tomatoes with a couple of avocados for guac. I sometimes grate the garlic for that. But I guess it just depends on how strong you like your garlic (the smaller the pieces of garlic, the stronger its flavour.)

You have a lot of good recipes already, so I am just giving you some tips!!

Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Refrigerate until ready.

For a very quick "guac" just take a 1/4 cup of salsa and mix it in with your mashed avocados.

You don't need to have tomatoes in your guacamole.

To extend a limited supply of avocados, add either sour cream or cottage cheese to your guacamole dip. Purists may be horrified, but so what? It tastes great. In fact, guac with some cottage cheese added to it is a favorite.of many!
