I think that yes, you do. I would keep it for 1/2 hour in the fridge. More than that and it gets too cold. Just a little coolness really adds a "crispness" that livens up your salad. If it has to remain in the fridge so long that it is too cool, just let it sit 20 minutes or so before eating it. (turn once with a spoon to equal out the temp.)
I make a dressing out of Mexican sour cream, lemon, garlic and dijon mustard that is really great in order to avoid using mayo. (I personally hate the stuff, it makes me gag, but with raw eggs, cheap oils, sugar and nasty chemicals, its really unhealthy as well AND it goes bad really quickly - try alternatives)
And just a note I don't find that potato salad keeps well at all. Its not like stew, curry or lasagna where the longer the flavors sit together, the better. In fact two things will happen to your salad over time: a) the dressing will separate out making it watery and b) the ingredients themselves will become soggy. (24 hours - or less- is the "flavor" maximum - it will stay good (without mayo) for about three days, but you should then drain off the excess liquid and let warm almost to room temp before eating for best results.....)

It certainly tastes much better when it is cold. A little chives cut up and put through it is nice as well. Because it contains mayo you need to keep it refrigerated or it will go off. Good luck.
it is better when it's cold. if it is maynaise based, it will need to be refridgerated at some point. if you make a german or french potato salad, those don't really need to be because they're oil based, not mayo based. that's why they are better for long summer picnics.
If it is a mayo based potato salad, it is actualy best to make it the night before & place in fridge. This give all the flavors a chance to blend together. If made with oil, then no it does not need to be made ahead of time or in the fridge....
Not really, as long as you keep it in a cool, dark place well covered against dust and flies. If it is a question of lack of space in the fridge, this is totally acceptable. I also happen to like it room temperature anyway. Just put any remaining salad in a smaller box or bowl back in the fridge when you clear up. Should be absolutely fine.
No, it's not a must.
But I find potato salads ( and pasta salads ) tastier after the dressings are mixed into it and it has a chance to sit for about 12 hours or so. ( The potatoes and pasta gets to soak up the flavors from the other ingredients.)
So I usually make it the night before and let it rest in the fridge until time for serving the next day.
