I find the secret to a good egg white omelet is to add a couple of teaspoon of water, a pinch of pepper and 1/4 tsp salt and not to overbeat your egg whites. Just stir them lightly. If you overbeat them, they tend to toughen. I saute some freshmushrooms with sliced green onion or chopped chives (for the color as much as for flavor), season with salt and pepper, pour into a bowl and set aside. Then I combine butter and olive oil, pour in the egg whites, swirling the pan and use a spatula to pull up the edges and when it's set on the one side, I flip it (I don't flip regular omelets made with the whole egg) Then I put the mushrooms down the center, top with shredded cheese of your choice (gruyere is awesome with mushrooms or swiss) and pull over one side, then the other and slide it onto a plate when the cheese is melted. Substitute with veggies of your choice, like sliced bell pepper and sweet onion, diced ham, etc..
Virtually no calories, and no fat! You just whip the white up a bit and cook in the normal way. Sounds great for weightloss, dunnit? I should point out it is the most boring, tasteless and disgusting thing you will ever eat (unless you add cheese of course, and eat it with chips ....)
It easier to just buy a product like "Egg Beaters" or "Better n Eggs" at you supermarket. These are egg whites in a carton. There's a little food coloring to make them look like eggs. You can also get them with vegetables, etc. included. Most have 0 grams of fat.

egg white only have about 17 calories per large egg 0grams of fat and 0 cholesterol. In an omelet you would use the egg whites as any other egg. For a litter omelet try whipping the egg whites for a few seconds .
