beer is good for marinating beef for a slow cooked casserole. It makes a great batter for fish and chips. If you reduce it down by gently boiling then add it to veal jus for a sauce for veal, chicken or beef or game.

Beer bread-it's a batter bread that's great because there's no kneading and it's economical.

Beer Bread
-3 cups self-rising flour
-1/2 cup sugar
-12 oz. beer (that's 1 bottle)
-2 tablespoon butter/margarine, melted

Preheat oven to 375 degrees. In a mixing bowl place flour, sugar and mix. Add beer. It will foam but mix until it's incorporated into the flour/sugar mix until it turns into a batter.
Put into a loaf pan that you sprayed with cooking spray. Bake for 52 minutes, take out of oven. Brush top with melted margarine and return back into oven to bake for 3 more minutes or until the top is golden brown. There's a total baking time of 55 minutes.

Beer and rock salt to marinade a really good steak for grilling. Marinade for a max of 10 minutes. Only works on a charcoal grill though, the rock salt makes of mess of a gas grill. Other ideas;
homemade bar-b-que sauce also - bread. There's alot of bread recipes. Here's an easy one.
INGREDIENTS
1 1/2 cups all-purpose flour
1 1/2 cups whole wheat flour
4 1/2 teaspoons baking powder
1 1/2 teaspoons salt
1/3 cup packed brown sugar
1 (12 fluid ounce) can or bottle beer - your choice of beer will change the taste of the bread. It's fun to experiment!
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large mixing bowl, combine all-purpose flour, whole wheat flour, baking powder, salt and brown sugar. Pour in beer, stir until a stiff batter is formed. You may nd to mix dough with your hands. Bake for 50 to 60 minutes.

Beer battered fried fish is delicious. In Wisconsin where we live, the Friday night fish fry is an old tradition. Serve with french fries, rye bread and butter, and coleslaw. Here's a recipe from cooks.com:

BEER BATTER FRIED FISH
1 egg
1 c. room temp. flat beer
1 1/8 tsp. baking powder
1 c. flour
2 tsp. salt
3/4 tsp. pepper
1 tsp. garlic salt
Fish fillets

Mix all ingredients. Wash and dry fish (pat with towel). Cut fillets to desired size. Heat 2 inches of cooking oil in pan. Dip fish pieces in batter; fry briefly in hot oil turning as necessary. Adjust the batter ingredients as needed so it doesn't get too thick or too thin.

If you have a deep fryer, that also works well.

Not a low fat meal, but really good!

1 bottle good quality imported beer; preferably ice cold.
1 bottle opener
1 person
1 lounge chair
1 pkg of any salty snack; optional

Hold beer in your right hand, let cold condensation run down your arm. Hold it against your forehead. Open beer with opener. Lean back in said chair.
Close your eyes. Enjoy. There is no better recipe.

Spice Rubbed Beer Can Chicken

Spice Rub:
2 tablespoons garlic powder
1 tablespoon ground cumin
1 tablespoon ground coriander
1 tablespoon paprika
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
1 teaspoon cayenne pepper
1/2 cup extra-virgin olive oil
1 lemon, zested
1 (3 1/2 to 4-pound) chicken
1 (12-ounce) can beer

Heat a gas or charcoal grill with a lid big enough to accommodate the bird. Put a drip pan below the grates.
Mix the ingredients for the Spice Rub until they are well blended. (This will keep, covered, in the refrigerator for 1 week.) Rub it all over the chicken, inside and out.

Open the beer and take a big swig or just pour out a couple of ounces. Sit the chicken on the beer can so the legs are at the bottom and the wings are at the top. Stand the beer can on the grates over the drip pan. Put the cover on and cook over indirect heat until the juices run clear, about 1 hour. (If using charcoal, push the coals to 1 side so the chicken is not over direct heat.)

Note: This chicken can also be cooked in a 350 degrees F oven. Just stand the beer can in a shallow roasting pan and cook about 1 hour or until juices run clear.

if i make a pot of chili, i like to add a bottle of beer to it for some of the liquid. you can also use it for the liquid in a potroast.
