Any Ideas??

I want to take my boyfriend on a picnic for his birthday. Any ideas on what to bring?? By the way - he allergic to most fruits except for strawberries. Thanks so much!!!


Answers:
Any kind of rollup sandwich makes a great picnic item...you can put any filling in them , they travel well, don't need utensils and are neat. Cheeses and a great loaf of bread; something like grilled chicken kebobs...just marinade and pregrill small pieces of white meat on a small stick (delicious cold), storebought wings, make salad and put each serving in a styrofoam cup with a fork in each..( put a few dollops of sald dressing in bottom of cup first, put salad on top, don't mix til you eat) , brownies for dessert...any combination of above would be good. Have fun, its such a nice idea it probab;y won't matter what you serve. Just try to think of things he likes!

Take the individual sponge cakes put that strawberry glaze stuff on top add chopped strawberries and whipped cream and you have instant strawberry short cake

How about checking out some of the available items at the deli? You could choose a couple of salads, finger foods, and whatever else appeals to you, and round it out with a loaf of good bread, and a nice dessert from the bakery. Don't forget the wine!!

Here is a few ideas - I hope you like one or all - Enjoy!!!!

Fried chicken

2 (3 lb.) broilers, cut into pieces
1 1/2 c. unsifted flour
1 1/2 tsp. salt
2 tsp. thyme leaves
2 tsp. paprika
1 egg
1/3 c. milk
2 tbsp. lemon juice
Vegetable oil

Wash but do not dry the chicken. Combine flour, salt, thyme, and paprika, in a shallow dish. Beat the egg and combine with milk and lemon juice in another shallow dish; mix well.
Roll the chicken in the flour; dip in the egg mixture and then roll again in the flour. Set aside on waxed paper for at least 30 minutes so that the coating will dry; roll in flour again if the coating has remained moist.

Pour vegetable oil about 1/2 inch deep in a very large skillet and heat to 375 degrees. Cook chicken pieces, skin side down, until golden brown on one side, usually 5-10 minutes. Then turn and brown the other side. Reduce heat; cover the skillet and cook for 25 additional minutes or until thoroughly done. Drain on absorbent paper before eating or packing for the picnic.

Messy Taco Salad

1 pound lean ground beef
1 pound shredded Cheddar cheese
1 (15 ounce) can ranch-style beans
1 head iceberg lettuce, shredded
1 1/4 ounces taco seasoning mix
16 ounces thousand island dressing
14 1/2 ounces tortilla chips

In a large bowl, toss the lettuce and cheese. In a separate bowl, mix together the dressing, taco seasoning, and beans.
Brown ground beef in a large skillet over medium-high heat, and drain. Add the ground beef and the dressing mixture to the lettuce and cheese, and mix well. Refrigerate until just before serving, then crush the tortilla chips while still in the bag and combine them with the salad.


Strawberry Pretzel Salad

1 1/2 cups crushed pretzels
4 1/2 tablespoons white sugar
3/4 cup butter, melted
1 cup white sugar
2 (8 ounce) packages cream cheese
1 (8 ounce) container frozen whipped topping, thawed
1 (6 ounce) package strawberry flavored gelatin
2 cups boiling water
1 (16 ounce) package frozen strawberries

Preheat oven to 350 degrees F (175 degrees C). Mix together the pretzels, 4 1/2 tablespoons sugar and melted butter. Press into the bottom of a 9x13 inch pan. Bake for 10 minutes, or lightly toasted. Set aside to cool completely. In a medium bowl, beat the sugar and cream cheese until mooth. Fold in whipped topping. Spread evenly over the cooled crust. Refrigerate until set, about 30 minutes. In a medium bowl, stir together the gelatin mix and boiling water. Mix in frozen strawberries, and stir until thawed. Pour over cream cheese mixture in pan. Refrigerate until completely chilled, at least 1 hour.

Cold fried chicken, KFC is fine or make your own. Some good cheese and strawberries. White wine or lemonade. Potato salad, here's my recipe:

POTATO SALAD FOR TWO
1-2 lbs. small red potatoes
Dill weed to taste, fresh or dried
Salt and pepper
Mayonnaise

Scrub potatoes and cut in half. Do not peel. Boil till just done, drain and rinse with cold water till chilled. Blot with paper towels till most of the excess water is gone. Mix well with all other ingredients and chill well. Keep chilled during serving time.

Chocolate chip cookies for dessert, here's a good recipe from cooks.com:

CHOCOLATE CHIP COOKIES
2 1/4 c. all purpose flour
1 tsp. baking soda
1 tsp. salt
1 c.(2 sticks) butter
3/4 c.granulated sugar
3/4 c.packed brown sugar
1 tsp. vanilla extract
2 large eggs
2 c.(12oz.) pkg. semisweet chocolate morsels

Preheat oven to 375 degrees F. Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar, and vanilla in larger bowl and mix until creamy. Add eggs one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels. Drop by rounded tablespoon onto ungreased baking sheets. Bake for 9 to 11 minutes or until golden brown. Allow to stand for 2 minutes. Remove to wire racks to cool completely.

NOTE: If you aren't a baker, not to worry. Buy some Pillsbury chocolate chip cookie dough in a tube at the store, it makes excellent cookies. Just follow directions. When I have to make a lot of cookies fast for Cub Scouts or whatever, this is what I use. Often people can't tell the difference.
