How do i make amazing (easy) cupcakes?
i'm making cupcakes and i have a cookbook but it's rubbish, i'm about to go to the shop to get some flour and such but what is it i need exactly and can anyone provide a good recipe? thanks x

2 1/4 cups all purpose flour
? 1 1/3 cups sugar
? 3 teaspoons baking powder
? 1/2 teaspoon salt
? 1/2 cup shortening
? 1 cup milk
? 1 teaspoon vanilla

Easy Cupcake Recipe Directions
Preheat oven to 350 degrees. Line cupcake pans with paper liners.
Combine flour, sugar, baking powder, and salt in a large mixing bowl. Add shortening, milk, and vanilla. Beat for 1 minute on medium speed. Scrape side of bowl with a spatula.
Add eggs to the mixture. Beat for 1 minute on medium speed. Scrape bowl again. Beat on high speed for 1 minute 30 seconds until well mixed.
Spoon cupcake batter into paper liners until 1/2 to 2/3 full.
Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean.
Cool 5 minutes in pans then remove and place on wire racks to cool completely.
Once cupcakes are completely cooled, frost with your favorite frosting recipe or decorate as you desire.
the pillsbury funfetti cupcakes are the best cupcakes i've ever had and all you have to do is add eggs and oil.

Well if ya want yummy and easy....try this:
Buy a Box or 2of Funfetti Cake Mix (Of ur Choice)
Follow the directions
EXCEPT ur going to pour mix in Cupcake liners like you would Cupcake mix
& bake the same...
Its fast and they come out good.
Use reg. cake frosting...BuT not too much and decorate if u ar egoing to decorate as you like
I would just use a cake mix, they really are excellent and very easy. Just follow directions. Then if you want to, you can make your own frosting and decorate with candies, fresh fruit, edible flowers, etc. Or the frosting in the cans is really good too.
Here's a good buttercream frosting recipe from cooks.com:
BUTTERCREAM FROSTING
1 lb. confectioners' sugar
1/2 c. butter, softened
1 tsp. vanilla extract
3 tbsp. milk
Food coloring (optional)
In large bowl, beat together sugar, butter, vanilla and milk until smooth. If necessary add more milk until frosting is spreading consistency. If desired, add a few drops of food coloring. Mix well.
For chocolate buttercream frosting, add 1/2 cup Hershey's cocoa.

Here is something totally out of the ordinary and so yummy that it will definately have people asking you for the recipe.You won't need to measure out and stir in individual spices; they're all in the apple butter. Makes 24 cupcakes.

1. Preheat oven to 350 F. Stir together flour, baking powder, baking soda, and salt in a small mixing bowl; set aside. Beat butter or margarine in a medium mixing bowl with an electric mixer on medium speed for 30 seconds. Add sugar; beat until fluffy. Add egg; beat well. Beat in apple butter and vanilla. Stir lemon juice into evaporated milk (mixture will curdle). Alternately add flour mixture and milk mixture to apple butter mixture, beating on low to medium speed after each addition just until combined.
2. Grease muffin cups or line with paper bake cups; fill 2/3 full. Sprinkle with sugar. Bake at 350 for 20 to 25 minutes or until a toothpick inserted in the center comes out clean. Cool on wire racks. To transport, place desired number of cupcakes in a single layer in a covered container.

This is Paula Dean from the tv food network's 1234 cake and there is alink on the bottom of the page for her 7 minute frosting. Seems very easy and I am sure it is good.
Peanut Butter Cupcakes
INGREDIENTS
* 2 cups brown sugar
* 1/2 cup shortening
* 1 cup peanut butter
* 2 eggs
* 1 1/2 cups milk
* 1 teaspoon vanilla extract
* 2 1/2 cups all-purpose flour
* 1 teaspoon baking soda
* 2 teaspoons cream of tartar
* 1 pinch salt
DIRECTIONS
1. Preheat the oven to 350 degrees F (175 degrees C). Line a cupcake pan with paper liners, or grease and flour cups.
2. In a large bowl, mix together the brown sugar, shortening and peanut butter until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, cream of tartar, baking soda and salt; stir into the batter alternately with the milk. Spoon into the prepared muffin cups.
3. Bake for 15 to 20 minutes in the preheated oven, until the top of the cupcakes spring back when lightly pressed. Cool in the pan for at least 10 minutes before removing to a wire rack to cool completely.
