Blueberry French Toast:

1? hours 30 min prep
6-8 servings

12 slices day-old white bread, crusts removed, cut into 1-inch cubes
2 (8 ounce) packages cream cheese
1 cup fresh blueberries or frozen blueberries
12 eggs
2 cups milk
1/3 cup maple syrup or honey
SAUCE
1 cup sugar
2 tablespoons cornstarch
1 cup water
1 cup blueberries
1 tablespoon butter

1. Place half of bread cubes in greased 9"x13" baking dish (enough to thoroughly cover bottom of baking dish).
2. Cut cream cheese into 1-inch cubes; place over bread.
3. Top with blueberries and remaining bread.
4. Beat eggs, milk, syrup or honey together and pour over bread.
5. Cover and chill 8 hours or overnight.
6. Remove from refrigerator 30 minutes before baking.
7. Cover and bake at 350 for 30 minute. Uncover and bake 25-30 minute more or until golden brown and the center is set.
8. In saucepan, combine sugar and cornstarch; add water.
9. Bring to a boil; boil 3 minutes, stirring.
10. Stir in blueberries; reduce heat.
11. Simmer 8 to 10 minutes or until berries burst.
12. Stir in butter until melted.

Pain Perdu
INGREDIENTS:
8 slices day-old french crusty bread sliced 1" thick
2 eggs, lightly beaten
dash salt
2 tablespoons sugar
1/2 cup milk
2 to 3 drops vanilla extract
8 tablespoons melted butter
honey or syrup
PREPARATION:

In a small bowl, beat the eggs with salt, sugar, milk, and vanilla. Pour into flat bottomed glass dish. Put bread slices into the dish to soak, a few at a time.

Turn with a spatula and allow to soak on the other side, but not too long, or they will be difficult to turn. Lightly butter a baking sheet; gently remove the soaked bread slices to the baking sheet, and continue with the remaining bread slices. Spoon any remaining egg mixture over the slices.
Place the baking sheet in a preheated 400 degree oven; bake for 15 to 20 minutes, turning after the first 10 minutes to brown on both sides. Serve immediately with melted butter and your favorite honey or syrup.
Serves 4.

Caramel-Pecan French Toast

1 cup firmly packed light brown sugar
1/2 cup butter
2 tablespoons light corn syrup
12 slices honey white bread
3/4 cup raisins
1 cup chopped pecans, toasted and divided
6 large eggs
1/2 cup milk
2 teaspoons grated lemon rind
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1 1/2 cups whipping cream, divided
1/4 cup powdered sugar
Maple syrup
Fully cooked bacon slices (optional)

Preheat the oven to 350 degrees F.
Combine first 3 ingredients in a small saucepan; cook, stirring constantly, over medium heat 3 to 5 minutes or until sugar dissolves.

Pour brown sugar mixture into an ungreased 13 by 9-inch baking dish. Arrange 6 bread slices in brown sugar mixture, cutting slices as necessary to fit in dish. Sprinkle raisins and 3/4 cup pecans evenly over bread. Top with remaining bread slices.

Whisk together eggs, next 4 ingredients, and 1 cup cream. Pour egg mixture over bread slices in baking dish.

Bake, uncovered, for 40 minutes or until a wooden pick inserted in center comes out clean.

Beat remaining 1/2 cup whipping cream until foamy; gradually add powdered sugar, beating until soft peaks form.

Divide French toast evenly among individual serving plates. Top each serving with whipped cream; drizzle with maple syrup, and sprinkle with remaining 1/4 cup pecans. Serve with bacon, if desired.

Stuffed French Toast

2 1/2 pounds ricotta cheese
3/4 cup sugar
1 orange, zested
1 lemon, zested
2 eggs
1/2 cup milk
3 tablespoons margarine or butter
10 slices white bread

Blend the ricotta cheese, sugar, orange and lemon zest in a medium mixing bowl. Cover and set aside. Beat eggs and milk in a wide flat bowl. In a large saucepan or griddle, melt margarine on medium heat. Dip each piece of bread into the egg mixture briefly on each side. Place in saucepan and cook until browned on each side. Spoon about 2 tablespoons of the ricotta mixture onto 5 pieces of French toast and spread. Place remaining 5 pieces of toast on top of mixture.

I don't have a recipe off hand but I do have a tip. Use a pinch of baking powder in the egg mixture that the bread is dipped in. You might need two pinches if you are making a bigger batch. The baking powder helps to alleviate the "soggy in the middle" problem.

If you use milk that is starting to sour and bread that is a little stale it will taste better.

This is how we make french toast. In a deep bowl beat together the following with a wisk:
3 eggs - 1/2 cup sugar - a couple of drops of vanilla extract - and about 2 tablespoons milk.

Once this is well beaten, heat a skillet, I use non-stick with about 2 tablespoons of oil. Take your bread - day old or slightly stale bread is the best, put it down one slice at a time into the bowl and coat with egg mixture on both sides, making sure to hold down bread for a few seconds on each side until bread absorbs some of the egg mixture. Transfer a couple of slices to the skillet and cook over a medium heat until the egg is cooked on both sides and through the middle. Once you take out the bread, if it is sweet enough you can eat just like that, or if not sweet enough you can dust with powdered confectioners sugar or use syrup as you would on pancakes.

It might take a little longer but the waits worth it!

Orange French Toast
Ingredients:
2 cups of fresh orange juice
1 teaspoon of vanilla extract
2 cups of half and half
1 teaspoon orange extract
6 eggs, beaten
2 (1 pound) loaves of day old French bread
? cup of powdered sugar
? cup unsalted butter
2 Tablespoons Grand Marnier

Preheat oven to 325 degrees. Mix first 7 ingredients together and pour into a large shallow dish. Cut French bread (diagonally) into 1 inch slices. Soak bread (2 minutes Max) on each side. Brown slices in butter over medium-low heat in large skillet. When all are browned, place on cookie sheets (in a single layer) and bake 20 minutes. Remove from oven, sift some powdered sugar over slices and serve hot with maple syrup and orange marmalade.
