FAMILY MEATLOAF

2 lbs ground round
1 cup bread crumbs or crushed saltine crackers
2 eggs
1 cup Parmesan cheese
1 small onion diced
1 clove garlic crushed
1 pkg meatloaf seasoning mix
1/4 tsp ground black pepper
1 small can tomato sauce

Mix ground beef, bread crumbs, eggs, 1/2 cup cheese, onion, garlic, seasoning packet, and black pepper. Pour tomato sauce over the top and sprinkle with remaining 1/2 cup Parmesan cheese. Place in a loaf pan and bake at 350°F for 1 1/2 hours on bottom rack of oven.

Final internal temperature should be 170°F for ground beef. Ovens vary, so check meatloaf after 1 hour.

Dad's Meatloaf with Tomato Relish

Tomato Relish:
Extra-virgin olive oil
1 onion, finely diced
2 garlic cloves, minced
2 bay leaves
2 red bell peppers, cored, seeded, and finely diced
2 tomatoes, halved, seeded, and finely diced
1/4 cup chopped fresh flat-leaf parsley
1 (12-ounce) bottle ketchup
1 tablespoon Worcestershire sauce
Sea salt and freshly ground black pepper

Meatloaf:
3 slices white bread, crusts removed, torn into chunks by hand
1/4 cup whole milk
1 1/2 pounds ground beef
1 pound ground pork
2 eggs
Leaves from 2 fresh thyme sprigs
Salt and freshly ground black pepper
3 to 4 bacon slices


Preheat the oven to 350 degrees F.
Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.

Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.

This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small "hamburger" patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.

Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.

Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist!

Mix equal portions of ground beef, veal and pork. Add salt and pepper to taste. Mix in an egg or two to make sure it is moist, and add a handfull of crushed saltine crackers to help hold it all together, and add a few dashes of wostershire sauce for some zip.

Bake to desired doneness. I like mine a little rare-med rare.

In the last ten minutes of baking add this sauce to the top of the loaf: I eyeball all my ingredients.

I forgot to add something: I always saute a small onion and a clove of garlic in a bit of oil until it is soft and then mix this into the meat.

when i make meatloaf i usually shoot from the hip. heres a typical recipe:

1lb ground beef
2 eggs
1 onion chopped
a few cloves of chopped garlic
hand full of oats (~1/4 cup)
couple shakes of worcestershire sauce
salt and pepper to taste
~1/4 cup of ketchup or favorite barbecue sauce, maybe less - eyeball it

mix that all up, put it in a loaf pan, and bake at 350 for... 40 minutes or so

I just use a favorite meatball recipe and shape it into the form of a loaf. However, I have added tomato soup to it or cream of "" as well. This is one of my favorite places to get recipes

I take about a pound of ground beef and about 1/2 - 3/4 pound of ground pork. Combine it with about 1 cup bread crumbs, an egg, some ketchup, 1 small chopped onion, 1/2 a medioum chopped bell pepper, salt, pepper and a couple dashes of worchstershire sauce. I vary the amount of bread crumbs and ketchup depending on the consistancy. Then I shape it and put it in a dish and cover the top with ketchup.

Homemade Meatloaf:
This old fashioned meatloaf is made with lean ground beef, ketchup, a sliced tomato and American cheese slices.
Ingredients:
2 pounds lean ground beef
1 cup fresh soft bread crumbs
1/2 cup finely chopped onion
1/3 cup milk
1/3 cup ketchup
2 eggs, well-beaten
2 teaspoons salt
1/4 teaspoon ground black pepper
1 teaspoon dried leaf oregano, crumbled
1 medium tomato, sliced
4 to 6 slices American cheese
Preparation:
Combine ground beef, bread crumbs, onion, milk, ketchup, eggs, salt, pepper, and oregano. Mix gently until well blended. Shape into a loaf (about 8x5 inches) on a 13x9x2-inch baking pan. Arrange tomato slices on top of the loaf.
Bake 1 hour and 15 minutes at 350°. Place cheese slices, overlapping, over the tomatoes the last 5 to 10 minutes. Serves 6 to 8.

2 large eggs
1/2 sleeve crushed saltines (Crush them right inside the sleeve.)
2 Tbls. dried minced onion
2 Tsp. Lawry's Seasoned Salt
2 Tsp. black pepper
1Tsp. dried Italian seasoning flakes
1/4 C. your favorite BBQ sauce

Mix well and flatten into 1 or 2 bread pans (keeps the shape better and bakes more uniformly)
Bake at 350 degrees for 45 mins. or until juice (fat) has separated from meat and meat is almost firm.
Let it rest for 10-15 minutes.
Pour off excess juice (fat).
Remove with a long metal spatula to serving plate.

Old-fashioned Meatloaf:

Prep: 20 min., Cook: 7 min., Bake: 1 hr., Stand 10 min.

1 tablespoon butter
3 celery ribs, finely chopped
1/2 large onion, finely chopped
2 pounds lean ground beef
2 tablespoons Worcestershire sauce, divided
1/2 cup Italian-seasoned breadcrumbs
1/3 cup ketchup
2 teaspoons Creole seasoning
1 teaspoon Greek seasoning
1 teaspoon garlic powder
2 large eggs, lightly beaten
1 (8-ounce) can tomato sauce
3 tablespoons tomato paste
1 tablespoon ketchup
Garnish: chopped fresh flat-leaf parsley

Melt butter in a medium nonstick skillet over medium heat; add celery and onion, and sauté 7 minutes or just until tender.

Stir together celery mixture, ground beef, 1 tablespoon Worcestershire sauce, breadcrumbs, and next 5 ingredients in a large bowl. Shape into a 10- x 5-inch loaf; place on a lightly greased broiler rack. Place rack in an aluminum foil-lined broiler pan.

Bake at 350° for 45 minutes. Stir together remaining 1 tablespoon Worcestershire sauce, tomato sauce, tomato paste, and 1 tablespoon ketchup until blended; pour evenly over meatloaf, and bake 10 to 15 more minutes or until no longer pink in center. Let stand 10 minutes before serving.

Yield: Makes 6 to 8 servings

INGREDIENTS

15 ounces dry bread crumbs
4 eggs
3 tablespoons garlic salt
3 tablespoons seasoning salt

DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine ground beef, tomato paste, bread crumbs, eggs, garlic salt and seasoning salt until well mixed. Shape into a loaf and place in a 9x5 inch loaf pan.
Bake in preheated oven 1 hour, until no longer pink.
