Looking for a recipe for a moist, heavy Carrot Cake.?

I am looking for a recipe for a heavy, moist carrot cake with a recipe also for a rich homemade cream cheese frosting. I am not interested in the carrot cake recipe that has pineapple in it. I want a really moist, dense cake, and the frosting must be thick, creamy and sweet. Thanks in advance!

This is from my Aunt Mae. It is exactly what you are looking for. I have NEVER tasted anything like it. It is GREAT. I hope you enjoy it as much as me and my family. Let me know when you make it what you think. e-mail me. I GUARANTEE it is what you want.
2 Cups flour
2 tsp baking soda
1 tsp. salt
2 Cups sugar
2 tsp. cinnamon
4 egg whites (stiffly beaten)
1 and 1/2 cup salad oil (I use Crisco oil)
4 egg yolks
1/2 cup raisins (optional)
3 Cups grated carrots (about 8-9 )
1 cup chopped walnuts (optional)

In lg bowl add 1st 5 ing. To this add oil, YOLKS and blend till well mixed with mixer. FOLD in stiffly beaten egg whites, carrots, nuts and raisins. bake in greased 13x9x2 pan 45 minutes at 350 degrees or till done when tested with toothpick.

Cream Cheese Frostrng:
8 oz. cream cheese (room temp)
1/4 cup butter
2 tsp. vanilla
2 Cups powder sugar (may need little more...depends on consistency you want)
I double the icing because I like it HEAVY on my cake. lol
Keep cake refrigerated after icing it. (and covered.)

To get a heavier cake you need more eggs, of course the other ingredients would have to correspond to the addition of more eggs.

Try allrecipes.com. If you don't want to use pineapple, see if you can find a recipe with applesauce.

My homemade cream cheese frosting is as follows: 8 oz. brick cream cheese (softened), 1 tsp vanilla and 1/2 to 3/4 cup powdered sugar. Whip the cream cheese with a hand held blender and then add the vanilla. Add 1/2 cup of powdered sugar. It's your call whether you want to add more powdered sugar.

Cake:
1/2 c Cocoa
2 c Flour
2 c Sugar
2 ts Baking soda
4 Eggs
1 ts Vanilla
1 1/2 c Vegetable oil
2 c Grated carrots
1 c Undrained crushed pineapple
Icing:
8 oz Cream cheese
1 Butter
1 Powdered sugar
1/2 c Coconut
1 c Chopped nuts

Preheat oven to 350. Combine cocoa, flour, sugar, baking
soda, and salt. In a separate bowl, mix together eggs,
vanilla, and oil. Add egg mixture to cocoa mixture and mix
well. Stir in carrots and pineapple and Pour into three 9
inch round greased cake pans. Bake 30 minutes or until
toothpick inserted in center comes out clean. Cool cake.
Icing: combine cream cheese, butter, and powdered sugar
and beat well. Fold in coconut and nuts. Spread on carrot
cake and refrigerate until ready to serve.

This is the BEST homemade carrot cake recipe I have ever found/made/eaten!!! Enjoy!

1 1/2 cups oil
2 cups sugar
4 eggs
2 cups flour
2 teaspoons baking soda
1 pinch salt
3 cups grated carrots (fully packed)
2 teaspoons cinnamon
1 teaspoon vanilla

Icing
1/4 lb butter
8 ounces cream cheese
1 lb powdered sugar

Beat oil and sugar, then add eggs.
Add and mix the rest of the cake ingredents in the order given Beat for 1 minute.
Pour into 3 9" cake pans.
Bake at 350 degrees for 35 minutes.
Icing: Mix butter and cream cheese together until smooth, then add sugar a little at a time.
Beat until smooth.

Carrot Cake Recipe

INGREDIENTS:
2 cups sugar
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
2 cups grated carrots
1 1/3 vegetable oil
2 eggs, beaten
1 cup chopped pecans
1 cup drained crushed pineapple
2 teaspoons vanilla extract
1/2 teaspoon lemon extract
1/2 teaspoon almond extract

PREPARATION:
Combine dry ingredients in a large mixing bowl. Add carrots, oil, and eggs. Beat until well mixed. Stir in remaining ingredients. Put batter in two 9x5x3-inch loaf pans. Bake at 350° for 1 hour. Frost with cream cheese frosting or glaze as desired.

INGREDIENTS:
1 package (3 ounces) cream cheese
1 tablespoon warm water
1 teaspoon vanilla extract
3 cups sifted confectioners' sugar
PREPARATION:
Beat cream cheese with water and vanilla; gradually add sugar, beating until smooth and spreading consistency. Makes 1 1/2 cups, enough to frost top and sides of a 9-inch square cake or top of a 13 x 9-inch cake Double recipe for a layer cake.
