I need a cookie expert?
I need a recipe for butter cookies. I've tried several, but they don't have that good old fashion buttery taste like I remember. They were kind of bland. Can you help? :-)

I'm not looking for a sugar cookie, or a cookie where the dough is refrigerated or one using a cookie press. This is not the cookie that you decorate for the kids. It's a simple butter cookie.

Butter Cookies
3 sticks (12 oz.) unsalted butter, at room temperature
1-1/4 cups sugar
3/4 teaspoon salt
1 extra large egg
1 teaspoon pure vanilla extract
3 cups cake flour
3 Tablespoons whole milk, for wash
PREPARATION:
With an electric mixer on slow speed, cream the butter, sugar and salt together.
Slowly add the egg and vanilla, continuing to beat on slow speed.
Add the flour all at once and mix, scraping down the sides and bottom of the bowl once.
Turn the dough out onto a piece of plastic wrap and pat into a 1/2-inch rectangle. Cover completely with the wrap and place in the refrigerator for about 1 hour, or until firm.
Preheat oven to 357°F. Line cookie sheets with parchment paper.
On a lightly floured surface, roll out the dough until 1/4-inch thick. Using a 2-inch diameter, fluted round cookie cutter, cut out the cookies and place 1-inch apart on prepared sheets. Gather up the scraps and refrigerate until firm enough to roll out again.
Brush the cookies with some of the milk and bake for 10-15 minutes until a light golden color. Transfer to a wire rack to cool.
Storage:
Makes about 40 cookies. May be stored in an airtight container for a few days

if you switch your spice to vanila extract it could be a good thing
Butter cookie
3/4 cup sugar
1 cup BUTTER
3 oz cream cheese
1 egg
1 tsp vanilla( or you can use almond flavoring)
3 cups flour
Combine everything but flour in a mixing bowl. Beat in medium speed , scraping down the sides often. Beat until light and fluffy, add flour and beat until mixed in well.
Divide dough into thirds and wrap each in plastic or wax paper and chill at least 2 hours. Preheat oven to 375, Allow dough to soften a few minutes, enough so you can roll it easily. Roll about 1/4 inch thick and use cookie cutter, dipped in flour. Place in cookie sheet and bake 7 to 10 minutes, until edges are a very ligh brown. Remove and place on rack to cool. I use parchemnt paper on my cookie sheet to make sure the cookie doesn't stick.
