WOW, nooo, not the shell. The white part around the yoke is what egg whites are!

Well it depends on what you're trying to do.
If you want to paint the egg then it means the shell, blowing out the insides through a pin hole.
If you are making meringue then it is the clear matter surrounding the yolk (yellow glob).

Egg whites are the part of the inside of the egg that is not the yellow yok.
Gently crack an egg into your hand with your fingers splayed just a bit. Let the clear stuff drip into a bowl and toss the yellow yolk part.
Or use egg-replacer from a health food store since most eggs come from horrible chicken farms!

Egg whites aren't really white. They are clear and gluey. You separate them from the yolks by breaking the egg over a big bowl and tipping the broken egg so that all the gluey egg while just falls into the bowl while you keep the egg yolk in the broken half shell.
The yolk is a lot heavier than the egg whiles and it is round and stays together usually so this separation thing is not as hard as it sounds. Watch the movie 'Sabrina' with Audrey Hepburn. There is a scene where she breaks eggs with one hand - watch her do it and you will see how very easy it is!
It's the inside of the egg not the yolk or the shell. And if you whip the egg whites make sure that you don't get any of the yolks mixed in there. If you do the whites won't whip up right.
