What is the difference between all purpose and bread flour?


Answers:
tony --- all purpose flour is not as strong as bread flour. protean wise and has far less gluten. Bread flour is milled from a hard winter wheat . all purpose flour is milled from a blend of summer wheat and hard winter wheat. ( Bread flour is to be used in making bread and bread rolls it is also used in a few pastries like cream puffs and eclaires. All purpose flour can be used in most pastries and most bread recipes.

Different size of grains & gluten levels.

Different flours will have different densities when baked and give different texture.

Oft times, all purpose and bread flours can be interchanged. Those to are very similar.
