Here are a couple of ideas for you to try. Good luck on finding just the right recipe! As others have said, you can always freeze the cookie dough.

COOKIE DOUGH CHEESECAKE

CRUST
1 3/4 cups crushed chocolate chip cookies
1/4 cup sugar
1/3 cup butter or margarine, melted

FILLING
24 ounces cream cheese, softened
1 cup sugar
3 large eggs
1 cup sour cream
1 teaspoon vanilla extract
Cookie Dough

CRUST:
In a small bowl, combine the cookie crumbs and sugar; stir in the butter. Press the mixture evenly and firmly onto the bottom and 1" up the sides of a greased 9" springform pan; set aside.

FILLING:
Preheat oven to 350*F.

In a large bowl, beat the cream cheese until smooth; gradually add the sugar and blend until smooth and light.

Add the eggs, one at a time, blending with the mixer on low speed just until combined.

Add the sour cream and vanilla; blend well.

Pour the filling over the crust.

Using a teaspoon, drop the cookie dough over the filling, gently pushing the dough below the surface; the dough should be completely covered by the filling.

Place the springform pan on a cookie sheet; bake for 45-55 minutes, or until the center is almost set.

Cool on a wire rack for 10 minutes; carefully run a knife around the edge of the pan to loosen the cake.

Cool for 1 hour longer; cover and chill overnight.

Remove sides of pan.

choc chip cookie dough ice cream. You CAN freeze the dough for about a couple months. It will keep. Wrap tightly and put in plastic bag too.

A friend of mine did this. Scoop out the dough and drop it into a round pan like a pizza pan and bake it as a cookie cake. Great for kids cause they all get their own little cookie off the cake.

I think you are pretty stuck with cookies. I would bake them up and give them away you would win points with a lot of people cause everyone love chocolate chip cookies.

Whatever you make unfortunatley won't taste much different from chocolate chip cookies, but why not try to add different in gredients to it, like nuts, marshmallows, and add ice cream at the end. The best solution for the expiration problem is to try to find room in your freezer for it, you could always also give your dough away to someone else.

You can use any pie filling flavor you like - blueberry, lemon etc. These are Yummy!

I saved this recipe yesterday from BHG. Don't see why you couldn't use choc chip dough here.

You can always freeze the dough. Freeze in smaller batches and when you need it thaw in refrigerator then bake. It'll be fine.
