Wanting to make a nice dinner for two?

Our 9th wedding anniversary is coming up in August and I want to make a nice stuff chicken with brocoli and cheese. IS there a quicker way to prepare it and cook it than going out to the store and buying it. I heard the prep time is like 30mins and the cooking time is about an hour. Along with the rosoitto and veggie medly I was going to prepare I don't want to be int he kitchen all day long and then too tired to enjoy our time together. Can someone suggest something similar or more efficent or quicker than this menu? I want it to be nice.

This recipe is for four servings, but you can make half of this recipe.


Broccoli Stuffed Cornish Hens
10oz pkg frozen broccoli, cooked and drained well
2T. butter
1/4 tsp salt
1c. cooked long grain rice (I use Success Rice)
Dash of pepper
1/2 c. shredded mild cheddar cheese (you may use shredded swiss
cheese, or even cheese whiz) (My favorite is cheez whiz or velveeta)
4 cornish hens- rinsed and patted dry with paper towels.

Combine broccoli, rice, cheese, butter, salt and pepper.
Lightly salt cavities. Stuff birds with broccoli mixture.
Rub outside with shortening, and place in baking pan.
Bake at 350 degree for an hour and 15 minutes.

do a crock-pot recipee that way it only takes prep time and tastes tender and cooks all day....

Make your chicken the night before and place it in the refrigerator. Make sure it comes to room temperature before you bake it. The risotto will have to be made the day of to ensure the best flavor and creaminess, but you should be able to pretty much have everything else finished the day before. Here's an alternative to your chicken and brocalli dish:

Chicken Stuffed With Artichoke Hearts and Goat Cheese:

4 Boneless Chicken Breasts
1 can artichoke hearts, quartered, drained (reserve liquid)
1 4 oz block of goat cheese
3 T chopped parsley
1/2 cup bread crumbs
Salt and pepper
1 cup white wine
1 T dijon mustard
1 T fresh thyme

Chop artichoke hearts and mix with goat cheese, parsley, and bread crumbs. Make a pocket in each chicken breast and stuff as much of the filling in that you can. Season with salt and pepper and saute to brown. Place in baking dish and bake for 1 hour. Remove from oven and place on serving platter. Deglaze baking dish by stirring in white wine and artichoke liquid. Bring liquid to a boil and stir in mustard. Add salt and pepper to season as needed. Simmer until liquid is reduced and slightly thickened. Add 1 T fresh thyme while simmering. When reduced, spoon over chicken breasts and serve with wild rice pilaf and fresh green beans.

Grill steak & lobster tails instead!! That way, you can enjoy the summer evening & prepare the meal together. Serve along with loaded baked potatoes, grilled asparagus & fresh garlic bread. Use your imagination for dessert!!

Why don't you try one of those assemble ahead of time franchises such as Super Suppers, Dream Dinners, etc. They are great because you could go in, assemble and refrigerate or freeze without making a mess or shopping.

It might be the way to go to prevent the hassle and they sometimes will let you make half entrees. Just get the sides that you want and some wine. Pick up dessert from a high end bakery or grocery store. Tell the baker you just want 2 servings, no need to buy a whole thing of anything. Congratulations on your anniversary.
