Any recipes that require almost or no cooking?

Me and my BFF have been friends for years. Her grandma lives next door to me. Me and my friend would like to make my mom and her grandma lunch. We have already decided on a small salad for an appetizer and Hershey chocolate fudge brownies for dessert. We need an entree that requires none or almost no cooking with the stove. Any suggestions? Besides sanwitches!!!!!!!!!!!!!!!!!!! We want it to be nice because they've done so much for us! Thanx a ton!!!!!!!!!!!!!!!!!

All of you are helping alot. Thanx! Just to let you all know i can use the microwave and i am willing to go out and buy stuff. I'll have to talk to my friend about making pinwheels for an appetizer and then maybe a salad with meat for an entree.

Instead of a small salad for an appetizer, make some ham or turkey pinwheels. Take onion & chive cream cheese and spread it on a slice ham or turkey. Roll the ham or turkey and slice into pieces. Keep them rolled by piercing with a toothpick. For the entree, make a yummy salad. Mixed greens, Kraft Crumbles, manderine oranges, almond slivers, and grilled chicken, (which you bought already cut and grilled at your grocery store) for the dressing use a raspberry vinegarette. For a dessert, take orange sherbet and vanilla ice cream for a yummy creamicle.

Go to your local deli and get some fried chicken? Why are your ruling out sandwiches which is most obvious if you don't want to cook.
How about pinwheels, take a tortilla(and you can get any kind from plain, whole wheat, to those containing sundried tomatoes) spread some cream cheese on it, some ham or turkey, cheese, really anything you choose, roll it up and slice it, you have little pinwheels.

You can also do wraps using tortillas, put on chicken or whatever, fresh veggies, etc...... or do pita pockets stuffed with roast beef, bean sprouts and mustard or any combo of meat and veggies.

Buy tuna (2 cans) mix with 1/2 onion diced,2 tablespoons honey mustard,1 cup miracle whip or mayo. Serve it on a bed of lettuce with tomato slices on side. Wonderful summertime meal and no cooking.Also make sure you drain the tuna and get the one packed in water not oil.

Since it's almost summer how about a nice chicken salad? You can buy chicken strips already cooked and just chop them up. I like to add real mayo, a little lemon juice and some almonds. If you serve that on a bed of lettuce, or some really good bread or croissants that would be delicious and light. I like to add celery and dried cranberries or cherries as well. You don't have to add that, just put in what you like. Onions, hardboiled eggs, mayo and mustard would also be good. You can even buy chicken in a can. It is a lot better than you would think it is.

Hmmmm this is a tough one. Can you use the microwave? You could always heat something up in there. I dont know what ingredients you have to work with, or if you are able to go to the store and get something. Stouffers has some really delicious Entrees and sandwiches for the microwave. Or you could just serve them a delicious chef's salad and the brownies for dessert. Just make the small dinner salad into a chefs salad, use the recipe below.
CHEF SALAD

1 lettuce shredded or cut up
1 or 2 tomatoes dice or slice
4 lg. carrots shredded
1 or 2 cucumbers sliced
turkey and ham sliced or cubed
mild cheese shredded

Mix, add dressing serve

I made these following sandwiches for a luncheon and they were a hit..they look fancy and taste awesome, I don't know why you'd overlook sandwiches for a lunch. especially with a salad..

Honey Wheat Bagels, split and lightly toasted
Spread thin layer of cream cheese on each side
Add 1 slice of deli turkey, doubled over on one half
Place thinly sliced cucumbers on turkey
Add a generous amount of alfalfa sprouts on top of cukes, then put the other half of the bagel on top. You can add thinly sliced red onion too if you like....

what about a cold summer soup? Or you could get a rotisserie chicken from your local deli and make a delicious chicken salad with it by chunking up the meat, adding halved white grapes, chopped walnuts and some mayo along with a little grated nutmeg for added flavor.....

Well, that's a little difficult, since you don't want sandwiches. Here are some things to consider:

Pastas, while they do require heat, only need a pot of boiling water. It doesn't get much easier than that. So, with that in mind, here are some very easy ideas that involve just boiling water to prepare.

1.) Thin pasta (thin spaghetti) with tomato sauce, topped with Parmesan cheese and basil.

Here's what you'd need to buy from the store:

- 1 box of thin spaghetti noodles
- 1 can or jar of tomato sauce or tomato-based pasta sauce
- 1 bag of shredded Parmesan cheese, or a chunk of it that you can grate yourself.
-1 bunch of fresh or a small container of dry basil

Here's what you do: Start a big pot of water to boiling. Once it starts boiling, add a pinch of salt, if you would like. Then carefully drop in the dry pasta. Leave the pasta to boil for the amount of time stated on the box. Once it's done (you can pull out a single noodle and taste test it to see if it's tender enough), drain out the water. You do this by placing a colander (bowl with holes) into the kitchen sink, and carefully pouring the water and noodles into it. Then, once the water has all drained, return the noodles to the pot, or a large serving bowl. Then you can either assemble the plate of food yourself, by putting the pasta on the plate, and top it with sauce, cheese, and basil, or you can just put the plain pasta on their plates, and serve the sauce in a gravy boat or other small pitcher, so they can pour as much or as little as they like. If you choose that method, then also serve the cheese and basil on the side in small bowls or containers, so they can get their desired amount.

2.) Alfredo noodles with Alfredo cream sauce

You'll need:

-1 box of Alfredo noodles
- 1 jar of Alfredo sauce (this can be found on the isle with jars of tomato sauce)
- Fresh parsley (found in the produce section)

Here's what you do: Boil the noodles according to the directions on their box. Drain, as I told you above. Then mix in the Alfredo sauce. Mince the parsley into little pieces. Serve the pasta on plates, topped with parsley.

A nice side dish for these two pasta options would be some good crusty bread. You can buy a loaf of it in the bakery section.

Also consider serving open-faced sandwiches. These look very elegant, and are a twist on the traditional sandwich. You could use gourmet cheese and "fancy" meats, such as peppered turkey.

Another suggestion I can make is to choose a different appetizer, and "upgrade" your salad to be an entree. You could serve precooked chicken strips from the deli or a can of chicken (it would be located on the isle with other canned meats, such as tuna), served on a bed of baby spinach, and topped with Parmesan cheese, cherry tomatoes, bacon bits, and Cesar dressing. As an addition, crusty bread would go well with this salad also.

Also consider another untradition sandwich- pita pocket bread. If you have not encountered it, it is a flat bread, with slits in it, forming a pocket. You fill the pocket with whatever you like. You could try filling it with shredded lettuce, tossed in italian dressing, tomatoes, a little basil, parmesan or another italian cheese, black olives, red onion and some diced italian salami meat (this can be bought already cooked).

There are many other things that could be put together with little or no cooking, but I hope this will get you to a good start. Remember, have fun! Enjoy the time spent with people you care about.
