Answers:
Preparation and cooking time: About an hour and a half.

Topping:
1 cup of firmly packed brown sugar
1/2 cup unsalted butter
1 can (20 oz) of pineapple slices

Cake:
1 1/2 cups all purpose flour
6 Tbsp cake flour
6 Tbsp of ground almonds (from about 2 oz of whole almonds)
3/4 teaspoon baking powder
1/2 teaspoon salt
1 3/4 cups of sugar
1 cup (2 sticks) unsalted butter at room temperature
4 large eggs
3/4 teaspoon vanilla extract
3/4 cup sour cream

1 Start by making the caramel topping. Take brown sugar and butter and combine and melt in a saucepan on medium heat until sugar dissolves and the mixture is bubbly, this should take several minutes. Pour mixture into a 10 inch diameter stick-free cake pan with 2 inch high sides. Arrange pineapple slices in a single layer ontop of the caramel mixture.

2 Preheat oven to 325 degrees F. Whisk the flours, almonds, baking powder, and salt in a large mixing bowl. In a separate bowl, use an electric mixer to beat the sugar and butter together until light. Add eggs one at a time, beating after each addition. Beat in the vanilla. Add dry ingredients alternately with sour cream in 2 additions each, beating well after each addition. Pour cake batter over caramel and pineapple in pan.

3 Bake cake until tester inserted into the center comes out clean, about 1 hour to 1 hour 15 minutes. Cool cake in pan on a rack for 10 minutes. Turn cake out onto a platter. Serve warm or at room temperature.

Makes 12 to 14 servings.

You can use any flavor of cake mix that you like. Mix it up like normal. I use a 9x13 pan. Melt butter or margarine and cover the bottom of the pan. Sprinkle a good amount of brown sugar on the melted butter top with either crushed pineapple or pineapple slices. If you like put cherries in pan too! Carefully pour cake mix into pan and cover the pineapple . Bake at 350 for about 1 hour or until cake is done. . Also turn cake onto large cookie sheet when cake comes out of the oven. Be very careful when you flip the cake out of the pan as it will be very hot and the hot brown sugar Carmel can burn you. If you want other recipes try a search engine and type in pineapple cake.

Pineapple Upside-Down Cake

"Two layer pineapple upside down cake."

Original recipe yield:
1 - 2 layer 9 inch cake

INGREDIENTS
1 (10 ounce) jar maraschino cherries, drained
1/4 cup butter
1/2 cup packed brown sugar
1/2 cup flaked coconut
1 (8 ounce) can sliced pineapple, drained with juice reserved
1 (8 ounce) can crushed pineapple, drained with juice reserved
1 (18.25 ounce) package yellow cake mix

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Butter two 9 inch round cake pans. Sprinkle the bottom of each pan with 1/4 cup of brown sugar.
In one of the pans, sprinkle coconut over the brown sugar. Lay pineapple rings in a single layer on top of coconut. Place a cherry in the center of each ring. In the other pan, spread the drained crushed pineapple.
Mix the cake as directed on package, but substitute reserved pineapple juice in place of water. Divide batter between the 2 pans. Remember which pan has the pineapple rings in it.
Bake for 40 to 50 minutes in the preheated oven, or until a toothpick inserted into cake comes out clean. Cool in pans for 20 minutes.
While the bottoms of the cake pans are still warm to the touch, invert the layer with the crushed pineapple out onto a serving dish, then gently invert the layer with the pineapple rings on top of it for a dazzling two layer pineapple upside down cake.

Pina Colada Upside-Down Cake

1 yellow cake mix
3 eggs
1 cup pina colada mix
1/3 cup rum or pineapple juice
1/2 cup butter
1/2 lb dark brown sugar
1/4 cup coconut
walnuts or pecans
maraschino cherries
1 can pineapple rings
1/3 cup oil

Melt butter in bottom of cake pan. Sprinkle brown sugar in bottom.
Place cherries, pineapple, and nuts in pan. Mix cake mix, eggs,
pina colada, rum, coconut, and oil for 2 min. Bake 35 to 40 minutes
at 350. Cool 5 minutes and invert onto serving dish.

How comfortable are you standing on your head? This is often referred to as Hawaiian Yoga cake...........and requires excellent balance and a soft surface to put your head on. Be careful when you make the cake mix, not to catch your nose in the mixer. The can opener should be handled carefully also.

Author's note: DO NOT TRY TO EAT YOUR PINEAPPLE UPSIDE DOWN CAKE upside down! Don't even think it.

I just took a pineapple upside-down cake out of the oven. We have already had some, and it is really good. This is a tried and true recipe that I have been making for 40 years or more. My mom and grandmother used the same recipe.

Use a cast iron skillet (10 inch) if you have one, as a pineapple upsde-down cake made in an iron skillet is the best. Otherwise, use another kind of skillet that can go in the oven or a round cake pan with tall sides, a 9 x 9 square baking dish, etc.

2) Drain a 20 oz can of pineapple, reserving the juice. I prefer to use the pineapple tidpits but crushed, sliced, or chunks work fine.

2) Melt 1/2 stick of butter and place in your pan/baking dish. (If using an iron skillet, put it into a 350 degree oven with the butter. When the butter is melted, remove from the oven.)

3) Sprinkle about 1/2 pound of dark brown sugar over the butter.

4) Place the drained pineapple on top of the brown sugar/butter. If you want to, you can place some maraschino cherries between the pineapple.

5) Mix up the cake and pour over the top.

6) Bake 350 degrees for about 30 minutes or until done.

7) Let stand about 5 minutes and invert onto a plate. If any sticks to your pan, don't worry, because you can take a spatula and carefully put it back on the cake

CAKE RECIPE:
2 eggs
1 cups sugar
1 cups all-purpose flour
1 tsp baking powder
1 tsp vanilla
1/2 cup pineapple juice
1/2 stick butter

Preheat oven to 350 degrees.

Melt butter and set aside.

Blend eggs and sugar. Add flour, baking powder, and vanilla. Stir in butter and pineapple juice. Mix until lumps disappear.

Bake for about 30 minutes. The cake is done when it springs back when touched.

This cake is also good served with strawberries or fresh peaches.

PINEAPPLE UPSIDE DOWN CAKE

2/3 cup butter
3/4 cup brown sugar

Place the butter and brown sugar in a frying pan and melt until it boils or bubbles. A cast iron pan works well because it's heavy and will be less likely to scorch.

1 can pineapple slices
maraschino cherries (enough to fill centers of pineapples)

Place pineapples in the butter and sugar mixture. Put cherries in the center of the pineapple. Cut the slices of pineapple into halves and line the sides of the frying pan with them (standing up on edge).
Prepare a box of yellow cake mix following the directions on the box to mix the batter (do not bake in a separate pan; follow instructions below).

Pour the batter over the pineapple and cherries.

Bake at 350°F degrees. When the cake is done, loosen the edges with a butter knife. Remove from heat and allow to sit five minutes, then turn it upside down on a serving dish.

Optional: Instead of using a cake mix, you can prepare the batter from scratch using the recipe below, or any recipe for yellow cake.


Scratch Cake:

1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
2/3 cup sugar
1/4 cup milk

Combine ingredients and beat 1 minute. Pour batter over pineapples and cherries (same as above). Bake at 350°F and follow same steps as above.
