Other than scrambled eggs/French toast/omelette, what really easy dishes can I make? preferably with just eggs and vegetables

You can scramble eggs with a number is delicious ingredients, such as any veggies -- onions, zucchini, mushrooms, pre-cooked potatoes, red peppers -- or meat such as left-over chicken, or salami, bologna, or, of course, cheese. Or you can use these ingredients to fill an omelet. Fritatas are delicious. Just stir-fry whatever vegetables you choose, pour beaten egg over the top, cook on top of the stove until eggs are well set, then sprinkle with parmesan cheese and put under the broiler to finish cooking.

I think Boiled eggs are good in summer, Then take out of fridge, add salt & pepper.

there's a Western Omlette which can be used for sandwiches ....
eggs done in pan with oil & butter and
onion / ham / green pepper ... make a sandwich and put on ketchup

or devilled eggs ...

egg salad ... with mayo and sweet pickles or chopped green pepper and fresh onion

Sitr-fry your favourite mix of vegetables in a little sesame oil with some garlic and ginger finely chopped. Mix 3 eggs together with milk to make a reasonably runny mix. Pour into a separate hot pan and make an egg pancake. You won't need to turn the egg mixture to brown the other side.

Once cooked cut into strips and combine with stir-fry. Add some sambal oelek (type of chili paste) and enjoy.

EGGS AND ASPARAGUS

2 lbs asparagus
6 eggs
3/4 cup grated Parmesan cheese
1/2 stick butter, melted
sea salt, to taste

Wash asparagus.
If you bend the asparagus, you will find a point at which it breaks off easily. The asparagus is most tender above this point. Snap off the bottom of each stalk and save for vegetable stock.

Thinly scrape the bottom of the remaining portion of the stalk off with a vegetable peeler, for about 1 inch.

Select a tall stockpot or asparagus steamer pan which is tall enough for the asparagus to stand in. Tie the asparagus into 6 bundles using butcher's string (you can also tie them with leeks, chives or Spring onions).

Poach the asparagus (just below the boiling point) in a large amount of lightly salted water. If the asparagus is tender and thin, then time the cooking for 12-14 minutes. If the asparagus stalks are thicker, 18-20. Add the asparagus to the cooking water after it is at the simmering point.

Meanwhile, in a skillet, sauté the eggs in a small amount of butter, one at a time. Keep warm.

When the asparagus is tender, remove from the cooking pot and drain. Discard string and arrange asparagus on a heated serving plate or 6 individual dishes. Sprinkle evenly with Parmesan cheese. Melt the 1/2 cup of butter in a saucepan. Pour over the asparagus.

Serve each portion of asparagus topped with one of the eggs.

1.Warm spaghetti noodles mixed with with eggs over easy, garlic, salt/pepper, parsley, and grated Parmesan cheese.

2.Fry diced potatoes and onion until golden brown. Crack and cook 4 eggs over easy on top of potatoes. Cover with foil until eggs have solid whites and runny yolks. Cover with shredded Cheddar and jalapenos, tomatoes. Serve with with a bit of sour creme and salsa.

Put a bunch of eggs in a mixing bowl, beat them. Get u some shreded hash browns put those in the bowl with the eggs. Now you need to cook urself some bacon crunch it up put in bowl. Mix. Cook your mixture in poucher so yhey will be round. Top off with cheese, tomato or whatever suites your fancy. YUM!

Frittata. Ham.
6 eggs beaten.
1 teaspoon oil.
? cup grated cheese
200g ham.
Tomato.
Salt and freshly ground Black Pepper.
1 table spoon of Fresh chopped parsley.

Heat the fry pan and add oil on a low heat and add cheese, ham, tomato, salt and pepper to beaten eggs and stir in.
Pre heat the grill.
Pour in the egg mixture and cook for 5 minutes. Do not stir.
To finish cooking put under the preheated grill until the top is brown. Watch the handle doesn't burn
Serve sprinkled with the parsley.

Here are a variety of international recipes:

Frittata

Frittata is a very versatile dish. You can substitute many vegetables depending on what you have in the fridge.

1 large onion, sliced thin
1 green pepper (julienne)
5 asparagus (julienne)
6 large eggs
2 tablespoons water
1-2 Tablespoons imported grated Parmigiano
Salt and pepper to taste.
1/4 cup extra virgin olive oil or enough oil to sauté

METHOD

In a non-stick pan, sauté the onions on low for several minutes. Add pepper and asparagus and cook until vegetables are soft.

Meanwhile, scramble the eggs and water well. Add cheese, salt and pepper.

Raise the heat. Pour and stir egg mixture in the pan. Then, lower the heat to a simmer and cover. Cook until set. Using plates, carefully transfer, flip and slide the frittata back into the pan to finish cooking. Sometimes, the pan may need a little cleaning up or extra oil before putting the frittata back. Frittata is ready when thickened and firm.

To serve: Cut in wedges. Nice with a garden salad and peasant bread.

Serves:3 - 4

Egg Salad Sandwich

1 large hard-boiled egg*, peeled and chopped
2 Tbsp mayonnaise
1 Tbsp chopped green onion
2 Tbsp chopped celery
Salt
Pepper
2 slices dark rye bread, toasted

*To make hard boiled eggs, place a few eggs in a saucepan, cover with water. Add a half teaspoon of vinegar to the water (if the shells crack while boiling, the vinegar will help keep the egg in the shell). Cover and bring the water to a boil. As soon as the water is boiling, remove from heat and let sit, covered, for 12 minutes. Drain water, add cold water to cool the eggs, let sit a couple minutes longer.

Mix together the chopped hard-boiled egg, mayonnaise, onion and celery. Sprinkle with salt and pepper Mix. Spread on the rye bread, add lettuce, and cut in half.



Migas


4 Large
fresh eggs
1/4 cup milk
1 tablespoon butter or margarine
1 cup broken baked tortilla chips
1 /2 cup grated cheddar cheese

Easy Directions
Mix eggs and milk together. Place butter or margarine in non-stick skillet. Add egg mixture and cook stirring until eggs start to set. Add broken tortilla chips and cheese and stir until eggs are set.

Makes 2 servings.

Tamago Yaki(sushi Omelette)

Tamago is Japanese for "egg". Tamago yaki is sushi using an egg, like a sushi omelette. I really love it for it's sweet taste and light texture. You need a tamago pan to make this recipe. Any type of stock can be used in place of the dashi for a less fishy taste. Sounds complicated, but after a bit of practice, it gets much easier.




4 large eggs
4 tablespoons dashi stock
1 tablespoon sugar
1 teaspoon mirin
1/2 teaspoon soy sauce
salt


Beat the eggs VERY well, being sure to get them as smooth as possible.
Pour about 1/4 of the mixture into a well-oiled tamago pan and spread as if you are making a crepe.
As the mixture cooks, bubbles and sets, roll it and move it to the back of the pan.
Add more oil to the pan and some more of the mixture, making sure to get some under the roll.
As it cooks, roll the old roll back to the front of the pan, then again to the back.
Repeat until you are out of mixture.
Remove roll from the pan and roll as you would a sushi roll, squeezing out excess liquid.
You can roll it into either a round or rectangular shape and slice it when it has cooled.
Can be served as is, or as nigiri, atop a mound of rice wrapped in a thin sheet of nori.

Hi, I like to make this recipe for a fancy breakfast sometimes. Its very easy!
Salsa and Egg Souffle

Make as much as souffle dishes as you want:
- Per souffle dish: cover bottom of dish with salsa, then beat 1 egg with 1/4 cup of milk pour over salsa, salt and pepper to taste and grated cheddar cheese on top. Bake in oven for 1 hour @ 350.... You can serve with fresh fruit on side with croissants! Enjoy!
