Know any good recipes?

So I recently have moved in with my disabled brother, along with my husband, 2 kids and best friend (she's kinda my nanny for the summer). We are strapped as it is trying to pay for his nursing home bill and don't have a ton of money to spend. I was wondering if anyone knew any good, inexpensive, and goes a long way recipes they would like to share. Even if its just stuff thrown together in a caserole or maybe an authentic cultured meal, I am just tired of trying to buy cheap and end up making the same things week after week. Thanks!!!

MILDRED'S EASY CHEAP CASSEROLE

1 (8 oz.) cheese whiz
1/2 c. milk
7 oz. spaghetti, break in thirds cook and drain
2 tbsp.butter
10 oz. cooked broccoli
1 c. chopped chicken or turkey
1 (4 oz.) can mushrooms, drained
2 tbsp. chopped pimento
1/4 tsp. salt
1/4 tsp. sage

Combine cheese and milk mix. Toss spaghetti with butter. Combine all ingredients Mix well. Spoon into 2 quart casserole. Cover and bake at 350 degrees for 30 to 35 minutes. Stir well before serving. This is easy cheap and good.

CHARLIE'S CHEAP CHILI

1 lb. extra lean chopped beef
1 can peeled tomatoes
1 can tomato sauce
1 lg. yellow onions, chopped
1/2 sm. green pepper, chopped
1 1/2 tbsp. chili powder
1 tsp. cumin

Brown the beef and onions in a 12 inch skillet and drain before adding all other ingredients. Simmer for 1-2 hours. Serves 2 with healthy appetites

CHEAP BEEF STROGANOFF

2 tbsp. butter
1/2 c. diced onions
Garlic
2 tbsp. flour
2 tbsp. salt
1 can sliced mushrooms
1/4 tsp. pepper
1 lb. ground beef
1 can consomme
1 tbsp. vinegar
1 (6 oz.) can tomato paste
1 bag egg noodles
1 pt. sour cream

In a heavy skillet over medium heat, melt butter, saute onion and garlic until soft. Sprinkle mixed flour, salt and pepper over meat. Add meat and mushrooms to skillet and cool. Stir often for 6 minutes.
Stir in consomme, vinegar, tomato paste. Simmer, uncovered for 10 minutes. Stir often, cook until desired consistency. Cook noodles for 14 minutes, drain in hot water, return to cooking pan after melting 2 tablespoons butter. Blend in sour cream just before serving and simmer 2 minutes to heat. Serve over noodles.

Beef Stew:
Brown beef the butter. Blend sauce mix with water & add to meat stirring. Add vegs, stir & heat.

There are lots of vegetable stew recipes -- variations on the same theme. You can make a vegetarian chili, or omit the tomato sauce and add curry powder to make curried vegetables. Or you can add tomato sauce, sweet potatoes and some peanut butter to make "ground nut stew." Ratatouille is a vegetable stew with tomato, green pepper, green beans, onions, garlic, olives, zucchini and eggplant. Serve over pasta or brown rice, or add a can of chick peas, make a salad, and you have a nourishing meal. Hope that helps.

one of our favorite meals and also very cheap meals. is chili dog casserole..I break up a pkg of hot dog buns in a pan, cut up cheap hot dogs into bite size pieces, put chopped onion on top if wanted, then pour two small cans of chili on it, then lay cheap sliced cheese on top and bake at 350 for 25 to 30 minutes...Its a favorited here and goes alot further than just chili dogs, seems to taste better

S.O.S (Sh*t on the Shingle)
There are many variations but here's my mother's.
4 tbsp. butter
4 tbsp. flour
4 cups of milk
pepper or cayenne to taste (she uses black pepper)
8 oz jar of dried beef (my mother rinses it, takes away the saltiness) (sometimes she adds two jars)
1/2 pound of hamburger cooked and drained (optional)
Melt butter in large skillet over low heat. Whisk in flour to form a roux. Whisk in milk, a little at a time, increase heat to med-high and cook stirring, until thickened. Bring to a boil, stir in chipped beef , hamburger (optional) and seasoning, heat through and serve over toast or rice or even a baked potato.

Chil Pie
2-3 cans of chili with beans, Frito Corn Chips, Cheddar Cheese
Heat up chili and pour over a bowl of corn chips and sprinkle with cheese

Mini Hotdogs

1 small pkg of lil smokies
American Cheese Slices
2-3 pkgs of crescent rolls

Open the crescent rolls and tear at the perforations. And then cut triangles in half to make 16 triangles per package. Cut each American slice into thirds. Add a slice of cheese on triangle and then place smokie on top and then roll dough to form a little crescent. Bake in oven at 375' for 10 minutes.

Mexican-inspired meals tend to be very cheap. My family often makes nachos with some meat, cheese, sour cream, and salsa or even make spaghetti or pizza using these things as toppings. Spaghetti and meatballs is also an inexpensive meal. Also, sometimes it's nice to make something as simple as hamburgers or hot dogs with a vegetable. Ramen is cheap and makes a good meal for every once in a while. Sandwiches, of course... Sometimes making "breakfast for dinner," having eggs, bacon, fruit, and toast for dinner, is a nice change, too.

I like to make chicken broccoli casseroles. I place box of cooked noodles in a 2 qt casserole dish, top them with a bag of broccoli and about 2 cups of cubed, cooked chicken. Then, I top that with a a can or two of cream of broccoli soup mixed with milk (depending on how moist you like it) and then top that with about a cup of cheese. I bake that in a 350 degree oven for about half an hour, letting it heat through nicely.

Also, I loved this recipe for stroganoff. I have kids living here, too, so I skipped the mushrooms for them, and I made it with ground turkey instead of beef. http://allrecipes.com/recipe/easy-stroga...

Well you can always make the old stand-bys like brown beans with ham or bacon, meatloaf, and vegetable soup.

Tator Tot Casserole
1 to 2 lbs ground beef, cooked and grease drained off
1 onion, chopped (cooked with the meat)
2 to 3 cans of green beans, drained
1 can cream of mushroom soup
1 can cream of chicken soup
1 of the above soup cans of milk
1 bag tator tots
salt & pepper to taste

In a baking pan layer in this order: meat with onions, green beans, tator tots. In a bowl combine soups, milk, and spices. Stir well and then pour over tator tots. Bake at 350 degrees F for half an hour to 45 minutes (tator tots will be golden brown).

Mexican Goulash
1 lb ground beef
1 small onion, chopped
1 packet taco seasoning
Cooked elbow noodles
1 can corn, drained
tomato juice

Cook beef and onion together. Drain when done. Add taco seasoning, corn, and juice. Cook till well heated. Then pour over cooked noodles and stir well.

Pot Pie
1 to 2 cups of cooked chicken, turkey, or beef
2 cans veg-all (mixed vegetables), drained
1 can diced potatoes, drained
1 can cream of chicken soup
1 can cream of mushroom soup
1 can refrigerated biscuits

Mix all ingredients together except biscuits. Pour into a baking dish. Salt and pepper to taste. Place biscuits in a single layer over the top of the casserole. Bake at 350 degrees F until biscuits are golden brown.

ENCHILADAS
2 cans pinto beans
1 pound ground beef
1 small can of chili's
1 medium sized can of enchilada sauce
cheese
tortillas

1. Cook the hamburger well and add the beans (without juice) to heat them up. mix in chilis
2. Put a tortilla against the edge of the large cooking pan and put a few spoonfuls of the hamburger mixture into it. wrap it up and continue with the tortillas closely packed together until the pan is full.
3. Pour enchilada sauce ontop of the enchiladas in the pan and sprinkle shredded cheese on top. alot of cheese is better.
4. Heat them in the oven at about 350 until the cheese is well melted because the inside is already cooked.

CHILI
2 pounds of beef (or chicken cut small)
3 cans of beans (mix of kidney and pinto
2 cans of tomatoes (diced)
1 package of chili mix or paprica, pepper, and salt
optional: small can of chili's

1. Fry up the hamburger in the bottom of a large pot
2. Add the beans juice and all
3. Add tomatoes and chilis and seasoning
