Roast at about 450 with chopped shallots, if you like. Drizzle w olive oil and sprinkle w salt for about 10-15 minutes. Check for doneness. Serve with a squeeze of fresh lemon juice. OR - you can blanch, or steam the asparagus.
Here's another idea:
Asparagus with Blue Cheese & Pine Nuts
1-1/2 Tbsp. red or white wine vinegar
1-1/2 tsp. finely chopped shallot
Salt, as needed
1/8 tsp. freshly ground pepper
2 Tbsp. olive oil
1-1/2 lb. Asparagus, trimmed
3 oz. firm blue cheese, chilled
3 Tbsp. pine nuts, toasted
To make vinaigrette, mix vinegar, shallot, 1/8 teaspoon salt, and pepper. Whisk in oil; reserve.
To blanch asparagus, in a frying pan large enough to hold asparagus in one layer, bring approximately 3 inches of water to a boil. Stir in 1 tablespoon salt. Add asparagus. Cook at a medium boil until fork tender, about 3 minutes, depending on thickness. Drain on paper towel; cool.
Arrange asparagus on a platter; drizzle with vinaigrette. Roll spears to coat with vinaigrette. Shred cheese onto a piece of wax paper, using the small holes of a shredder. Evenly sprinkle shredded cheese over asparagus; scatter pine nuts over cheese.
STEAM IT IN WATER
ymmm love fresh asparagus. My favorite way to cook it is to saute it in butter and garlic. Or if you want less calories steam it and add lemon and garlic. Either way is yummy.
i just steam it and serve with garlic powder, salt, pepper...lil margarine? :)
Chop off the ends about a 1/4 inch up the stalk. Pklace in frying pan. Add 2-3 tblsp butter, salt and pepper, and the juice from 1/2 a lemon. Sautee over medium heat until tender. Delicious with sea food (like a nice grilled salmon or broiled scallops....yum!!)

butter, garlic and a frying pan... I really like them this way. I put 2 Tbl spoons of butter about 2 cloves of fresh garlic. Let the butter melt, and add the galic... cook for a few min. add the asperaguas... its pretty yummy and easy...

You can steam it, stir- fry it or bake it. It doesn't take more than 10 - 15 minutes or so. Recipes.com will have more details.
Get a large frying pan, ie something that will fit the spears of asperaguas.
Make sure you cut off the ends. Not the flowing tips, but the cut ends.
Place the spears in the pan and line the pan with water. Not too much, you don't want alot of water. Simmer the spears until they turn bright green. Remove from the water and rinse with cold water. With the same pan, remove water and add about one to two tlb spoons of olive oil depending on how many spears your cooking. And saute one large minced clove of garlic.
Once carmelized, add the spears and cook until the spears reach desired tenderness. Sprinkle soy sauce lightly, about a tlb spoon per five spears is what I use. Toss till coated, remove from heat. Place in a casserol dish and sprinkle with seseme seads.

My favorite way is to lay it flat on a cookie sheet, douse in olive oil (use quite a bit) sprinkle with garlic salt and then broil it for about 5-7 minutes, turn and do another 5-7 minutes. The tops come out a little crispy. Delicious!
I like to roast asparagus. It comes out delicious, keeps the green color and is easy.
Place asparagus in baking pan. Pour 3 - 5 tablespoons olive oil, lightly salt and pepper.
Place uncovered in 350 degree oven for 15 - 20 minutes.
