Do I cook the meat first or throw everything in the casserole.

Cook it first as a lot of the fat will come out,then drain it,otherwise your going to have a right soggy mess ?

Easy Ground Beef Casserole with Potatoes
1 to 1 1/2 pounds lean ground beef, browned
1/2 cup chopped onion
salt and pepper
3 large potatoes, sliced
2 Carrots, shredded
1 can cream of mushroom soup
1 cup shredded Cheddar cheese
Brown ground beef in a skillet with chopped onions; cook until onions are tender. Drain off excess fat; transfer ground beef and onion to casserole dish. Add layer of sliced raw potatoes, sprinkle with salt and pepper; shred carrots to cover potatoes. Put soup over carrots.
Bake at 350° for 40 to 50 minutes, or until potatoes are tender. Sprinkle shredded cheese over top and bake for about 5 minutes longer, or until cheese is melted.

My ex from TX made this nasty salty dish with instant mashed potatoes and cheddar cheese. he cooked the meat first, but if you plan to do so, I would slice the potatoes not thicker than my pinky finger, and cook it on even(375F for 30 min) heat, alternatively layering the veggies, then meat, etc. I wouldnt suggest eating it; the ground beef if it is of poor grade, will make everything greasy, and later will be sick with upset stomach. I would suggest boiling the potatoes slightly (5 min) first before slicing and seasoning the veggies well. Covering the caserole dish would also help. Good Luck

2 lbs ground round beef
1 onion chopped
1 to 2 cups of vegetables - chopped carrots and peas
1 to 2 lbs potatoes (4 big ones)
8 tablespoons butter
1/2 cup beef broth
2 teaspoons of Worcestershire sauce
Salt, pepper, other seasonings of choice
1 Peel and quarter potatoes, boil in salted water until tender (about 20 minutes).
2 While the potatoes are cooking, melt 4 Tablespoons butter in large frying pan.
3 Sauté onions in butter until tender over medium heat (10 mins). Then put the carrots in with the onions.
4 Add ground beef and sauté until no longer pink. Add salt and pepper. Add worcesterchire sauce. Add half a cup of beef broth and cook, uncovered, over low heat for 10 minutes, adding more beef broth as necessary to keep moist. Add peas .
5 Mash potatoes in bowl with remainder of butter, season to taste.
6 Place beef and onions in baking dish. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks that will brown nicely. You can use the fork to make some designs in the potatoes as well.
7 Cook in 400 degree oven until bubbling and brown (about 30 minutes).
shouldn't a casserole be made with proper meat?
mince (ground beef) won't taste like much anyway or is it some american thing you do? i'd only use minced beef for cottage pie.
and 'steve r' it's called shepherd's pie, hence the fact that it involves lamb!!?? so why do american's make it with beef...? you might as well just call it cottage pie.
