Here is a yummy recipe. However, i really prefer to use those little red or white new potatoes. They are not as starchy. You will notice a texture difference between starchy Idaho type potatoes and waxy potatos. You preference.
Oven Roasted Potatoes
A great roasted potato side dish made with olive oil and herbs.
1/8 cup olive oil
1 Tbs minced garlic
1/2 tsp dried basil
1/2 tsp dried marjoram
1/2 tsp dried dill weed
1/2 tsp dried thyme
1/2 tsp dried oregano
1/2 tsp dried parsley
1/2 tsp crushed red pepper flakes
1/2 tsp salt
4 large potatoes, peeled and cubed
1 Preheat oven to 475 degrees F (245 degrees C).
2 In a large bowl, combine oil, garlic, basil, marjoram, dill weed, thyme, oregano, parsley, red pepper flakes, and salt. Stir in potatoes until evenly coated. Place potatoes in a single layer on a roasting pan or baking sheet.
3 Roast for 20 to 30 minutes in the preheated oven, turning occasionally to brown on all sides.
Servings: 4
Preparation time: 15 minutes
Cooking time: 30 minutes
Ready in: 45 minutes

Cut the potatoes into bite-size chunks, place them in an oiled pan and place them in the oven at 400-450 degrees until they are golden-brown.
there are a few different ways. you can put them in the oven in a roaster whole or cut up i like to put them on the grill when we are bbqing. usually a little bit of oil and seasoning i use garlic and pepper.
alright... take 2 or 3 potatoes....... cut it into cubes..... place it(cook0 in d microwave with water 4 5 to 10 mins... (or on fire) ... next drain d water n add red chilli powder, turmeric pwder,salt... (1 tsp n salt to taste)... mix well n fry it with lil oil in a pan till its crisp..... trust me its yummm... u can eat it with chopped onions also... all d best :-)

Roasted potatoes.
I boil the potato first, skin on, skin off your choice, until they are almost soft.
Drain, oput them in a shallow pan or cookie sheet, drizzle olive oil over them, cut up some green onion (2-3) sprinkle on top, sprinkle a bit of garlic powder, black pepper and kosher salt, bake in hot oven 375-400 until the golden brown or the browness youl like.
At first wash the potatoes.
then cut them as you like but thin.
take a non-stick pan and pour 5-6 ml of oil.
After the oil gets heated put the potatoes inside the oil.
Then stir it carefully. after u get the roasted edges, add salt and chilly powder. stir them. then serve after 5 minutes.
Peel of the skin if u don't like eating with it before cutting.

OVEN-ROASTED POTATOES
3/4 lb. cubed potatoes (raw)
1 c. diced onions
1/2 c. each diced red & green bell peppers
2 tsp. each vegetable oil & butter, melted
1 tsp. salt
1/8 tsp. pepper
In 8"x8"x2" baking dish, combine all ingredients and toss to thoroughly combine. Bake at 350 degrees until potatoes are tender and golden, 40 to 45 minutes.
