What is your favorite rib reciepe?


Answers:
I have several, and I prefer pork ribs over beef, and cooked on a grill slowly.

Hot & Spicy Ribs

3 pounds pork ribs
1 medium onion, chopped
1 can (15 ounces) tomato sauce
2/3 cup cider vinegar
2/3 cup brown sugar
2 tablespoons butter
2 tablespoons chili powder
1 tablespoon prepared mustard
2 cloves garlic, minced
1/2 teaspoon pepper

PREPARATION:
In a large sauce pan, melt butter and saute onion and garlic until soft. Add remainin ingredients except the ribs, stir and bring to a boil. Remove from heat and allow to cool. Preheat grill and prepare for indirect grilling.

Place ribs on grill over direct heat for one minute per side. Move to indirect heated area. Close grill lid and cook for 20 minutes. Turn and continue grilling for 30 minutes. Baste with sauce on one side, grill for 10 more minutes. Turn and bast the other side. Grill until done (about 10 more minutes).

Chipotle Ribs

4 pounds country style pork ribs
1 1/2 cups red wine vinegar
1 cup olive oil
1 7-ounce can chipotle chiles in adobo sauce
4 scallions, chopped
1 jalapeno, seeds and stems removed, chopped
3 tablespoons fresh oregano
3 cloves garlic, chopped
1/2 tablespoons salt
black pepper to taste

PREPARATION:
In a blender or food processor combine garlic, jalapeno, scallions, chipotles, oregano and salt. Blend until just smooth. While blending, add the red wine vinegar and olive oil. Season pork ribs with black pepper and place in a large resealable plastic bag.

Pour mixture over top, turn to coat and refrigerate for 4 hours to overnight. Preheat grill. Remove ribs from marinade and place on grill over a medium fire. Grill for about 20 minutes or until done, turning as needed to avoid flare-ups and burning.

Dry Rubbed Cajun Ribs

1 rack pork ribs
2 tablespoons salt
2 tablespoons cajun seasoning
2 tablespoons black pepper
1 teaspoon cayenne
1 teaspoon white pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon paprika
Louisiana hot sauce and Worcestershire sause to taste

PREPARATION:
Mix the dry ingredients and rub into ribs. Add the hot sauce and worchestershire sauce to your liking. Let sit over night. Smoke or grill and serve with your favorite BBQ sauce.

Sweet Orange Pork Rib Marinade

4 pounds pork country style ribs, individually cut
1 6-ounce can tomato paste
1/2 cup brown sugar
1/4 cup frozen orange juice concentrate, thawed
2 tablespoons red wine vinegar
1 tablespoon mustard
1 tablespoon Worcestershire sauce
1/2 teaspoon pepper

PREPARATION:
Combine everything except the ribs in a bowl and mix. Prepare grill for indirect grilling. Place ribs on grill and cook for about 60 minutes. Turn and brush with sauce. Continue grilling until done. A couple of minutes before you remove the ribs from the grill brush on a heavy coating of the sauce.
