What is the best way to preserve rhubarb?

By "best" I mean not necessarily the fastest, but the method that will maintain the best quality through the winter.


Answers:
Wash it and slice into 1 inch pieces, put them on a cookie sheet, freeze until solid and put into freezer bags, no blanching necessary for rhubarb. You can put the pieces directly into freezer bags and omit the part about freezing on cookie sheets, I only do that so I can measure out exactly what I need for a recipe rather than dealing with a solid clump in a bag. Fruits and vegetables, rhubarb, that were once available only "in season"; are now available year round in supermarkets. If you're lucky enough to have an excess, freezing is an excellent way to preserve fruits and vegetables for later mealtime enjoyment.

We blanch them for a minute and freeze in ziplocs-I still have some from last year and recently made a strawberry rhubarb pie-it was awesome.

If you are into canning they preserve well that way too or I have also tried dehydrating but they take a long time in the dehydrater but the results were good. Hope this helps-enjoy!!

It depends on what you plan to use it for. For making pies, cobblers etc. canning is the best way. Also freezing it works, but will dry out if not used quickly.

Stew it then freeze it, it'll keep for ages like that. Don't add the sugar until you're reheating it after defrosting though, that'll help keep the flavour in.
