Turkey does not have enough fat to hold it together. I add egg (either whole or fake) with some oatmeal, plus whatever else makes the family happy-onions, peppers etc.

I also use egg as a binder to hold the turkey together. I don't find that it makes much of an impact on the taste and the patties come out looking pretty good.

try adding egg and some italian bread crumbs. I also like to buy stove top and put it in the food processor to add to meat instead of bread crumbs. It has better flavor and you don't have to add as many seasonings of your own.

I use the dark meat turkey. It has a higher fat content which seems to hold it together better. As you cook the fat out that part is no big deal. Actually most of the time I just fry it up loose in the pan and eat it that way.
