Simple and easy recipes?

ok so I just got out of school and i'm bored out of my mind! I need some not quick but simple recipes.

please help. thanks


Answers:
spicy chicken casserole
pre- heat oven to 400 degrees

4- boneless chicken breast season with your favorite seasonings
1- can rotel tomatoes
1- can cream of mushroom soup
1- can cream of celery soup
1 - can cream of chicken soup (only use half a can)
grated cheddar cheese or what ever flavor you like
6 - 8 cut up white corn tortillas

boil chicken breast until done all the way through, reserve broth, cool a little then cut in to bite size pieces set aside
in large bowl mix soup's, rotel , tortillas, cheese, and add some of the chicken broth or milk to thin it some (about 1 cup to 1 1/2 cups), add cheese, and chicken mix together pour in baking pan sprinkle top with more cheese cover with foil bake about 30 to 40 minutes until hot all the way through.

Pumpkin Roll Recipe

Cake part,

1 cup sugar
3/4 cup flour
2/3 cup of canned pumpkin
3 large eggs
1 tsp baking soda
1 tsp cinnamin

Mix all together until smooth. Pour onto greased and floured 9x13" baking sheet. You'll have to giggle the baking sheet slightly to create an even layer of batter on the baking sheet.Bake at 350 for 15-20 min. (Times may vary depending on altitude and oven temps.)You should be able to touch the top with your finger without it sticking and it should bounce back when pressed lightly.
Let cool for a few minutes but not totally cold. Take wax paper and place it on top of the cake, flip the baking sheet while holding the wax paper so that the cake lands evenly on it, fold the wax paper over the one side about an inch or so , then roll it up. Place it in the refrigerator for atleast an hour. Start to make your filling while the roll is cooling.

Filling.
1, 8oz pack of philadelphia cream cheese
4 tsp butter(recommend- country crock butter)
1 cup sugar
1 tsp vanilla

Blend all the filling ingrediants together until smooth, wait 15 minutes and blend again to make sure sugar melts and is evenly mixed.
Once the roll is cooled unroll and put a layer of the cheese filling on the entire roll,reroll using the wax paper as a guide to help roll it with out getting your hands really sticky. This does require a certain technique but can be accomplished with practice. Let sit for atleast an hour or longer before eating.

This recipe, if made right is like eating heaven, or so I've been told.

Here's one. Deeelicious:

Shrimp alfredo.
You can omit the shrimp and use chicken or put in some cooked bacon
(which makes it "spaghetti Carbonara") at the end or use no meat at all.
You'll need:
A box of thin spaghetti (Barilla is best)
Jar of alfredo sauce
A pound of raw medium shrimp, or some cooked chopped chicken or some cooked chopped bacon. (stir in at the end)
An onion
A red pepper (or not if you don't like them)
2 big cloves of garlic or a Tsp of garlic powder
An 8oz box of sliced mushrooms
1/2 tsp Cumin
salt and pepper to taste
a dash of nutmeg
Cayenne pepper to taste

Put a bunch of water on to boil (enough for the whole box of thin spaghetti~ you can always freeze single serving portions in a zip lock for later, I do it all the time)
Saute up (in a big skillet or pot on medium heat) a well chopped onion, 2 chopped garlic cloves and a chopped red pepper. Add the mushrooms in when the other stuff is almost tender.
Put the pasta in the boiling water pot and cook 8 minutes, then dump in a colander in the sink to drain.
When the stuff you're sauteing is tender, toss in the raw shrimp, stir 'til pink.
Add a jar of alfredo sauce, 1/2 c. grated Parm cheese (the kind you shake on spaghetti) and 3/4 c. fat free half and half, a dash of nutmeg, cayenne pepper to taste, salt, and 1/2 tsp cumin.
Garnish with lemon slices if you want, make garlic bread and salad. YUMMMMMY
