Meal ideas for leftover chicken?
I had a huge bag of chicken leg quarters and cooked them up, only to find myself left with 8 extras.
I am not too imaginative in the kitchen as far as thinking of things myself, and need some ideas for the leftovers.
I did think of one idea, chicken chili, I have heard about it, but have no clue what I would mix together. Do you make it the same as you would any other chili, just substitute the chicken for the beef?

Saw this on TV. Take the leftover chicken meat and shred it with a fork. Then you can use it for shredded chicken sandwiches, chicken nachos, chicken tacos, or chicken salads. The possibilities are endless.
Chicken Chili
Ingredients:
1 red pepper, chopped
1 green pepper, chopped
4 tablespoons butter
1 large onion, chopped
4 teaspoons minced garlic
1 teaspoon salt
1 teaspoon oregano
1 tablespoon chili powder
1/2 teaspoon cumin
1/2 teaspoon crushed red pepper
dash of cayenne pepper
2 small chickens, cooked
4 (16-oz.) cans black beans with liquid
2 (16-oz.) cans Mexican-style stewed tomatoes
1 (8-oz.) can tomato sauce
1 (6-oz.) can tomato paste
Directions:
Melt butter in a large Dutch oven over medium-high heat. Saute the red and green pepper and onion until tender. Add garlic and the remaining seasonings.
Reduce heat and saute another one to two minutes. Add chicken meat to pepper mixture and saute for another two to three minutes. Add beans, stewed tomatoes, tomato sauce and tomato paste to the mixture. Bring to a low boil.
Reduce heat and simmer, uncovered, for about 30 minutes or until chili thickens.

I have used left over chicken to make chicken noodle casserole. Just substitute chicken for tuna and you get a yummy meal.
Try chicken stew.
You could make home made chicken noodle soup. You could also make chicken salad. For these recipes, go to www.recipes.com.
My husband's favorite meal is chicken and dumplings. It's really easy to make, and you can use both raw chicken or leftover chicken.
2 cans chicken broth or one box
4 cups water
1 small bag of baby carrots or regular size
bag of carrots
celery and onion if you want it
Dumplings:
Milk
Bisquick
In a large stock pot, add in the broth and water
While heating liquids, add in chopped carrots,
celery, and onion, heat until carrots are tender
Cut chicken into bite sized pieces
Add chicken to soup mix in pot
For dumplings, follow the directions on the Bisquick box, it's usually 2 cups of Bisquick per 2/3 cup of milk. I always double the dumping recipe.
Add dumplings, by the spoonful, over boiling soup. Use all the dumplings!!!
Cook on medium heat for 10 minutes, then lower heat to simmer, cook covered for 10 minutes. MAKE SURE TO WATCH THE POT SO IT DOESN'T OVER FLOW!!
To serve, we serve the soup in large bowls with butter over the dumplings....delicious!!
King Ranch Chicken
3 to 5 cups shredded cooked chicken
1 can cream of mushroom soup
1 can cream of chicken soup
1 can cream of celery soup
1 onion diced
1 bell pepper diced
2-3 cloves garlic pressed, chopped, or minced
1 can diced rotel tomatoes and green chiles
2 cups chicken broth
3 tbs (or to taste) tony cachere's cajun seasoning
1 lb shredded chedder/ colby/ colby jack cheese
10 - 15 corn tortillas - quartered
Preheat oven to 350
Saute peppers and onion in butter/margerine/oil until the onions are transparent. Toss in garlic and saute a minute more. Add tomatoes and spices. Saute a couple of minutes. Add soups and seasonings. Simmer for about 5 minutes until all the soups are thinned out. Add enough chicken broth so that the sauce is the consistency of a gravy. Simmer for about 5 minutes, then sit to the side.
While sauce is simmering, boil the rest of your chicken broth. Dip tortilla wedges in broth to soften (just until they're floppy). Place 1/2 the tortilla wedges on the bottom of a greased 9x12 casserole dish. Place half the shredded chicken on top of the tortilla layer. Pour half the sauce over the chicken layer. Place 1/2 the shredded cheese on top of the sauce layer. Repeat layers. Cover loosely with foil.
Bake for 30 minutes on 350 or until the cheese is hot and bubbly.

Try this recipe. I make it all the time. It is great. It says to use chicken breasts; but, I'm sure legs will be fine. I usually throw some brocolli in with it; as long as you like brocolli it is very good.

CHICKEN ALFREDO
INGREDIENTS
1 pound fettuccini pasta
1 1/2 cups butter, divided
1 pound skinless, boneless chicken breast halves - cut into cubes
2 (16 ounce) containers whole milk ricotta cheese
1 pint heavy cream
1 teaspoon salt
1 cup grated Parmesan cheese
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add fettuccini and cook for 8 to 10 minutes or until al dente; drain.
Melt 2 tablespoons butter in a large skillet over medium heat. Saute chicken until no longer pink and juices run clear.
In a large saucepan combine ricotta cheese, cream, salt, Parmesan cheese and remaining butter. Cook over medium heat until well combined, about 10 minutes. Stir in cooked fettuccini and chicken; cook until heated through.
yes you can make chicken chili, just omit the browning of the beef step cause your ckicken is already cooked. Some other ideas: chicken ala king, chicken croquettes, chicken salad sandwhiches, just chicken sandwhiches, chicken fried rice/lo mein, chicken chow mein, chicken soup, chicken tacos, chicken enchiladas etc etc.
CREAMY CHICKEN & CHILE ENCHILADAS
1 pound shredded/pulled cook chicken
1 package (8 ounces) cream cheese, cut into strips
1 can (4.5 ounces) Old El Paso chopped green chilies
1 package (12 count) Old El Paso flour tortillas for soft tacos & fajitas
2 cans (10 ounces each) Old El Paso green chile enchilada sauce
3/4 cup shredded cheddar cheese (3 ounces)
Heat oven to 400 degrees.
Lightly grease 13x9x2-inch retangular baking dish. Cook chicken in 10-inch skillet over medium-high heat, stirring occasionally, until no longer pink in center.
Add cream cheese and chiles; reduce heat to medium. Cook and stir until blended and cream cheese is melted.
Spoon chicken filling onto tortillas; roll up and place seam side down in baking dish. Pour enchilada sauce over top; sprinkle with Cheddar cheese.
Bake 15 to 20 minutes or until hot and cheese is melted.
chicken salad or chicken dumplings
healthy and delicious chicken salad. Mix with chopped scallions, grapes, chopped walnut, celery, sour cream, mayo, a dash of tarragon, salt, pepper and garlic.
dark meat is more flavorful than white meat - this is very good.
Chicken Croquettes
3 cups cooked, finely chopped or shredded & chopped chicken meat
1 1/2 cups Italian seasoned bread crumbs
2 to 3 lightly beaten eggs
2 cups sauteed finely chopped onion
1 teaspoon salt
1/2 teaspoon ground black pepper
Combine the chicken, bread crumbs, 2 eggs and onion in a large bowl and mix well; if mixture is too dry to form patties, mix in another lightly beaten egg or add a splash of milk. Add salt and pepper to taste, mix well and form into small patties.
Heat oil in a large skillet over medium heat and fry patties in oil until golden brown.
