Taiwanese Omelette Recipe?

Does anyone have a good recipe for the Taiwanese street food "oh ah jian" (omelette)?

Recipe for two:

5 eggs
5 brown chinese mushrooms (soaked i water) then sliced thinly
1 white onions (minced)
3 tomatoes (cut)
1/2 c. sweet peas (washed)
1/2 slice of red bell pepper (canned)(sliced)
1tbsp cooking oil
1/2 butter
sesame oil
Black pepper powder (to taste)
2 Tbsp. oyster sauce
1tsp. fish sauce / salt
Chicken stock


In a frying pan (when hot already) put cooking oil and then butter. When the butter has melted put the onions, cook till translucent. Then put the chinese mushroom cook for a minute then add tomatos put the oyster sauce, fish sauce, salt and black pepper. Then cover without moving it. Medium fire. When you see the steam coming out of the cover, open it and mix pour the peas pour some stock and cook till the peas are soft. When the the peas are done make the fire big to dry off the remaining stock. When little stock is left break the 5 eggs and put it on top pour some sesame oil. When it starts to cook mix it all. Cook the it till the egg is almost done not dry. Remove from the fire and enjoy.. God bless you...
