How do you make great chili?!

How do you make great chili?

i'm looking for a good chili recipe, i have all the stuff at least i think and i've got a bag of red kidney beans now i'm just looking to see if anyone knows how to make a great chili?

TEXAS CHILI

2 lb very lean ground beef or diced chuck steak
7 T chili powder
1 T ground cumin
2 t paprika
1 onion, finely chopped
2 t salt
1 1/2 t cayenne pepper
2 T masa
1 8oz. can tomato sauce
1 15oz. can red beans (optional)
1 15oz. can tomatoes(whole or diced, drained) optional

Brown ground beef and drain. Stir in tomato sauce and 2 cans of water. Mix all ingredients except cayenne pepper and masa. Simmer 30 min. Add as much pepper as desired. Mix masa and 1/4 c warm water. Add to chili and stir well. Add Tomatoes or beans if desired. Simmer 20 min.
Of course, feel free to add more or less pepper. I usually serve it over rice or with tortilla chips, sometimes both. Enjoy ;)

2 lbs ground beef
1 large onion, chopped
2 cloves garlic, minced
2 cans tomato sauce
1 can tomato paste
1 (15 ounce) can tomatoes
1 teaspoon cumin
1 teaspoon paprika
2 teaspoons chili powder
1 teaspoon oregano
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon Worcestershire sauce
1 can chili beans


Saute meat, onions and garlic until done.
Add remaining ingredients and simmer for 2 hours.

Swick and Swick World Championship Chili Recipe

First group:
2 tablespoons vegetable oil
2 3/4 pounds tri-tip sirloin, cut into 1/4-inch cubes
1 tablespoon chili powder
3/4 cup finely chopped onion
5 medium cloves garlic, pressed into a paste
1 (14 1/2-ounce) can chicken broth
Second group:
2 canned whole green chiles, seeded and finely chopped
1 cup beef broth
1/2 cup prepared Mexican-style tomato sauce
1/2 cup prepared tomato sauce
1 teaspoon hot sauce

Third group:
1/2 cup California-style chili powder
2 1/4 tablespoons New Mexico-style chili powder
1 1/4 tablespoons ground cumin
1 teaspoon salt

Fourth group:
1/2 teaspoon arbol chili powder
1/2 teaspoon New Mexico-style chili powder
1/4 teaspoon monosodium glutamate
Pinch brown sugar
Pinch jalapeno powder


Start the first group of ingredients: Heat the oil in a large skillet over medium-high heat. Working in 2 batches, add the beef and chili powder and cook, stirring occasionally, until well browned. Drain the beef.

Transfer the beef to a large soup pot with the onion, garlic, and broth. Bring to a boil, lower the heat, and simmer, stirring occasionally, for 1 hour.

Add the second group of ingredients, return to a simmer, and cook, stirring occasionally, and for 1 hour.

Add the third group of ingredients, return to a simmer, and cook, stirring occasionally, for 45 minutes.

Add the fourth group of ingredients and simmer 15 minutes more. Divide among bowls and serve.

Chilli Sauce

INGREDIENTS:
About 2 ounces fresh red chiles, seeded
1 ounce shallots, peeled
1 ounce garlic, peeled
1 ounce fresh ginger, peeled
1/2 cup boiling chicken stock
3 to 4 teaspoons lime juice
1 teaspoon rice vinegar or malt vinegar
2 teaspoons granulated sugar
1/2 teaspoon salt

PREPARATION:
Combine chiles, shallots, garlic, and ginger in a food processor or blender and process to a paste. Transfer to a bowl and stir in boiling chicken stock, then remaining ingredients.
Let stand at least 1 hour before serving. (Can be stored in the refrigerator for up to two weeks).






Sweet Chilli Sauce

INGREDIENTS:
5 Thai Chillies chopped very small
500 ml maple syrup (I use Bi Lo Maple Flavored Syrup)
3 Tbsp cider vinegar
4 Tbsp sherry
4 Tbsp light soy sauce
2 tsp minced ginger
3 cloves garlic, crushed
1/4 tsp pepper
1/4 tsp paprika

PREPARATION:
Mix together chillies, maple syrup, vinegar, sherry, soy sauce, ginger, garlic, pepper and paprika.
Simmer ingredients in a saucepan, stirring frequently over low heat until thickened (about 30 minutes).
This recipe was submitted by Ted, who says that besides being used as a sauce, it is delicious as a marinade for stir-fried chicken thighs.

I love the way my mom makes chili. The ingredients she uses are:
ground beef
onions
garlic
red kidney beans
ground black pepper
crushed red pepper flakes
She puts them all together with about 3 or 4 cans of Campbell's tomato soup.
Then she serves it on top of rice or macaroni.

A good chili starts with the meat. I use ground chuck. Put the meat in a pot and pour tomato sauce over it with chili seasoning, salt to taste. Chop onions bell pepper. I use black beans put all in the pot let simmer for 30 min. Some times I add corn. The other thing I put in my chili is Otts salad dressing if I want it on the sweet side.

Corn & Black Bean Merlot Chili


Ingredients
1 Tbsp. Onion Onion?
3/4 cup Merlot Sauce
2 tsp. Garlic Garlic?
1 cup Corn, Black Bean Salsa
15 oz. can tomato sauce
15 oz. can stewed tomatoes
1 Tbsp. chili powder
1 tsp. cumin
1 lb. browned, drained ground beef
1 lb. browned, drained sausage

Directions
Combine all ingredients in slow cooker; stir to blend. Heat on low 4-5 hours. Makes 8 servings.
