BAKED FLOUNDER WITH CREAM OF CELERY
SAUCE

4 flounder fillets
1 can of Campbell's Cream of Celery Soup
1 heaping tablespoon Hellman's mayonnaise
1 tablespoon lemon juice

Preheat Oven 425°F.
Combine Cream of Celery Soup, mayonnaise, and lemon juice. Coat the bottom of baking pan with mixture.

Lay fillets on top, and coat top with remaining mixture. Bake for 20-30 minutes or until top browns slightly.

Serve over rice, with asparagus on the side.


GRILLED FLOUNDER

Filleted flounder steaks
1/3 c. soy sauce
1 tsp. black pepper
1 tsp. minced garlic
1/3 c. white wine
1/3 c. olive oil
1/2 tsp. red pepper
1/2 lemon

Mix one part each: white wine, olive oil, soy sauce. Marinate flounder for 30 minutes.
Place flounder on grill and season. Cook for 20 minutes covered, 5 minutes uncovered on grill.

Juice of 1/2 lemon is poured over cooked fish immediately before serving. Garnish with parsley.

Flounder is good for both you and the envrionment. Flounder is high in protein, is an excellent source of Selenium, and Vitamin B12 and is also a good source of Potassium, and Vitamin B6. It's also low in fat, yum!
P.S. Make sure to stay away from fish that are currently being overfished!

They are great eating I have at least one a week. Like mine with a dash of lemon or malt vinegar. Just nuke for 2-3 minutes covered with a paper towel.
Very similar to sole.
We have been getting both whole, though they do have Sole fillets, I haven't seen flounder fillets.
