How do i get soft pancakes? mine always have a crunchy outside?!

How do i get soft pancakes? mine always have a crunchy outside?

i tried low heat, medium, then high heat, butter, no butter, oil. but they always have this crunchy shell. how do i make them soft?


Answers:
the pan needs to be fairly hot but not smokey, put oil in and then pour it out into a cup because you dont fry a pancake and too much oil will fry it.

between pancakes wipe out the pan with a paper towel and then put a little new oil in pour it out and thatsa the way to do it.

Turn the heat down and use very little oil or a non stick surface

The best way to make them is on an electric griddle, so you can set the temp just right (make sure you put a drop of water on the skillet first and if the droplet dances around, it's ready) and then after you take them off the griddle, spread some butter or margarine on top and let it melt. My pancakes have been soft ever since I've started making them like this.

You are using too much butter or oil.
Wait till the pan gets hot and put a tiny bit of oil in the pan. You might want to wipe it around the pan with paper towels so it doesn't hang out in one spot.
Personally, I like crunchy pancakes.

don't overcook. also, you may want to add an extra egg for lightness.
